Ingredients

  • 2 bags (3-ounce) Ramen Noodle Soup in Oriental (other flavors will work, too)
  • 3/4 stick butter
  • 1/4 cup slivered almonds
  • 2 bags (12-ounce) bags broccoli cole slaw (in the bagged salad section of the grocery store)
  • 1/4 cup sunflower seeds
  • Chopped green onions, for garnish

Dressing Mix:

  • 3/4 cup canola oil
  • 1/4 cup brown or white sugar
  • 1/4 cup apple cider vinegar
  • 1 ramen noodle seasoning packet

Directions

Put the ramen noodles in a bag and crush them with a rolling pin while melting butter in a large skillet over low/medium heat. Add the crushed noodles and slivered almonds to the skillet and saute, stirring occasionally (keep temperature at low/medium heat). Meanwhile, whisk together all the dressing ingredients in a small bowl. Place the shredded broccoli into bowl and toss with the noodles, almonds, and sunflower seeds. Pour dressing over salad and toss to coat. Garnish with chopped green onions.

    I found this to be much too greasy. The recipe says the cook time is 5 minutes -- what are they cooking in 5 minutes? ... You can't brown the noodles and almonds on low to medium heat in 5 minutes. Mine took 20 minutes, and only after I increased the heat a bit. In general I found nothing very tasty about it. I really wanted to like it, and will probably make it one more time with some adjustments. If that doesn't work, I will have to discard the recipe.Read more

    This is absolutely delicious! It keeps for days in the fridge, improves with age but probably won't last that long. To make... this recipe even healthier and much lower in calories, I did not brown the ramen and almonds in butter, but instead browned them in a little canola oil. Recipe is a keeper!!!!     I have made a similar recipe, but using beef ramen with both seasoning packets, and without sauteing the noodles. It also... used coleslaw mix instead of broccoli and regular vinegar instead of cider. I have taken it to many pot lucks and everyone loves it and I always get asked for the recipe. I would have to agree it is not as good the next day, but not bad enough to throw out. I usually prep everything and mix it up about an hour before serving...long enough for flavors to come together, but not enough to get soggy. Read more

    I made this last night and every single person asked for the recipe. Very easy to make. I read all of the reviews before I... made it and I was glad I did because I think it made it even better. I took the suggestion of not adding as much oil and adding the other packet of seasoning and it made a big difference. I suggest browning the noodles to make them extra crunchy. Read more

    Loved it but changed it to reduce the calories

    I loved Paula's orginal recipe, but I was concerned that it might be too fattening so I changed it to make it a more... healthful dish. My family still loves it just as much. I used to TBLs. butter substiutute instead of the butter, I used only 1/3 cup of cannola oil and I used sugar substitute instead if the sugar. I also strongly disagree with the earlier reviewer who said it was not good the second day. My family loves the left overs even better than the orginal.Read more
