Ingredients

  • 2 bags (3-ounce) Ramen Noodle Soup in Oriental (other flavors will work, too)
  • 3/4 stick butter
  • 1/4 cup slivered almonds
  • 2 bags (12-ounce) bags broccoli cole slaw (in the bagged salad section of the grocery store)
  • 1/4 cup sunflower seeds
  • Chopped green onions, for garnish

Dressing Mix:

  • 3/4 cup canola oil
  • 1/4 cup brown or white sugar
  • 1/4 cup apple cider vinegar
  • 1 ramen noodle seasoning packet

Directions

Put the ramen noodles in a bag and crush them with a rolling pin while melting butter in a large skillet over low/medium heat. Add the crushed noodles and slivered almonds to the skillet and saute, stirring occasionally (keep temperature at low/medium heat). Meanwhile, whisk together all the dressing ingredients in a small bowl. Place the shredded broccoli into bowl and toss with the noodles, almonds, and sunflower seeds. Pour dressing over salad and toss to coat. Garnish with chopped green onions.

    The first time I made this I too thought it was a bit blah tasting - sort of oily without a lot of flavor. The second time I made it with the brown sugar instead of white and also added a half packet of Good Season's Italian dressing mix to the liquid along with the packet of noodle seasoning. Made a huge difference. Also, I have used this a main dish at potlucks and just add some cooked chicken breast meat - cut into cubes.

    I made this today for forty teachers. The compliments were astounding. I made it yesterday and added the dressing several hours before serving. I thought the dressing was very sweet before adding it to the slaw. After adding it the flavor was quite muted. I ended up doubling the flavor packets and adding sesame oil. The crunch of the sunflower seeds, noodles and almonds makes the dish. A great slaw!!!

    I just made a half-recipe to bring to a potluck. I think it tastes great as printed (but I left off the onion garnish. I used brown sugar and chopped my own fresh broccoli crowns instead of buying a bag. Let's see what the other guests think!

    By the way, the ramen noodles are sharp when broken up and ripped through the bag I rolled them in. Luckily, I had it on a cutting board so I didn't lose any.
