Ingredients

  • 2 bags (3-ounce) Ramen Noodle Soup in Oriental (other flavors will work, too)
  • 3/4 stick butter
  • 1/4 cup slivered almonds
  • 2 bags (12-ounce) bags broccoli cole slaw (in the bagged salad section of the grocery store)
  • 1/4 cup sunflower seeds
  • Chopped green onions, for garnish

Dressing Mix:

  • 3/4 cup canola oil
  • 1/4 cup brown or white sugar
  • 1/4 cup apple cider vinegar
  • 1 ramen noodle seasoning packet

Directions

Put the ramen noodles in a bag and crush them with a rolling pin while melting butter in a large skillet over low/medium heat. Add the crushed noodles and slivered almonds to the skillet and saute, stirring occasionally (keep temperature at low/medium heat). Meanwhile, whisk together all the dressing ingredients in a small bowl. Place the shredded broccoli into bowl and toss with the noodles, almonds, and sunflower seeds. Pour dressing over salad and toss to coat. Garnish with chopped green onions.

    To all of you "NEGATIVE" people out there about the fat content - I just have to say this: Sorry but some things ARE going... to have more fat content and that's that. Get over it. Try controlling your diet and maybe splurge on some goodness for once (i.e. - maybe cut out that danish in the morning or that big fat cut of cake for dessert...no fast foods!) Think about all those great vitamins this salad has!! Throw in some more veggies! I am 5'6", 115 lbs. My cholesterol and triglycerides are perfect. My blood pressure is, too. At 50, I?m in my prime. I EAT FAT!!!!! I LOVE IT!!! I ALWAYS use butter - sorry, but no fake crap for me. I use whipping cream in my eggs; I eat the skins from poultry (and try to steal every one elses.) MODERATION IS THE KEY TO ALL HEALTH! Thanks, Paula, for letting the world know that it's OK to have some butter! OK - off my soap box. I'm going to go grill up a nice juicy steak and enjoy every wonderful drip of fat from it. Read more

    Super easy to make. My husband loved it. This is a keeper. We didn't mix the dressing until we served it, that way it will... be crunchy when you eat it. This is a good tip if you are packing it for a lunch or potluck.Read more
