Ingredients

  • 1 head broccoli
  • 6 to 8 slices cooked bacon, crumbled
  • 1/2 cup chopped red onion
  • 1/2 cup raisins, optional
  • 8 ounces sharp Cheddar, cut into very small chunks
  • 1 cup mayonnaise
  • 2 tablespoons white vinegar
  • 1/4 cup sugar
  • 1/2 cup halved cherry tomatoes
  • Salt and freshly ground black pepper

Directions

Trim off the large leaves from the broccoli stem. Remove the tough stalk at the end and wash broccoli head thoroughly. Cut the head into flowerets and the stem into bite-size pieces. Place in a large bowl. Add the crumbled bacon, onion, raisins if using, and cheese. In a small bowl, combine the remaining ingredients, stirring well. Add to broccoli mixture and toss gently.

    We have potlucks at my work a lot, and I always get asked to bring this salad. When I make it at home, I have to set some... aside in another bowl because there's never any left when I pick my bowl up at the end of our potlucks ( I even make triple batches!!!!)     I made this recipe tonight and the family loved it. I modified it a little, I used two kinds of vinegars I divided it in... half to what the recipe called for. (white vinegar and rice vinegar), I also added cranberry raisin, white raisins, and regular raisins it comes in a package mixed, It can be found at any Safeway in the salad area or grocery store. I also cooked 6 slice of bacon cooked to a crisp for a crunch feeling and then I cooked 3 more slices of bacon to a medium consistency, not to crispy but enough for it to crumble. I decided not to add the cheese and added extra salt and pepper to my taste and what ever else the recipe called for. The mayo/sugar was just right I just added a little more salt to my taste. I will definitely will pass the recipe around. Great for cold broccoli as I really don't like to eat it unless it is with mayo or dip.Read more

    I'd just cut about half the sugar

    Very nice salad. Love the sweet and sour flavors. I'd just cut the sugar by half. I didn't use all the mayo either, but... that's just a personal taste thing. Since I added the full amount of sugar for the recipe, I just added a couple more tablespoons of vinegar to balance it for my taste. Read more
