Ingredients

  • 1 head broccoli, cut into florets and steamed
  • 2 cups chicken broth, or more for thinning
  • 1/2 cup heavy cream
  • Salt and pepper

Directions

Place steamed broccoli in a blender and blend until pureed. Transfer puree to a pot and add chicken broth and heavy cream. Season with salt and pepper, to taste.

    I made this last night, very good! My hubby said it's just like the soup his grandma used to make. I also sauteed 1/2 onion... and 2 cloves of garlic and pureed them with the broccoli. Quick and delicious - very nice for a bitter cold winter night. Next time, and there will be a next time!, I will probably leave 1/3 of the broccoli florets whole or largish chunks for a little more body. Thank you Paula for another excellent recipe!Read more

    I thought this was really good and easy. I used veggie broth, and added a bit of garlic, nutmeg, red pepper, and salt and... pepper. Also added about 1/2 cup of parm cheese. Great for vegetarians!Read more

    This is a very simple recipe for the soup, but we added a leek, sauted it up with a little butter, and used half & half, and... as Janet said, thickened it up a little. Came out very good, will make this again, I'm sure.Read more

    After reading the reviews I decided to make this myself. Yes, the initial recipe is bland, however, the great thing about... cooking is that you can experiment. In addition to the ingredients to this recipe, I also included 1 clove of garlic and 1/4 c. diced onion. I sauted the onion until translucent and then added the garlic and sauteed it for a minute. I then tossed the broccoli into the pot to coat. And then I pureed the broccoli, onion and garlic in a food processor adding lliquid to help puree (I had to do it in 2 batches because my processor is small). In the pot I added the cream. If you have a hand blender (which I did), I blended it some more and viola! A hearty meal in 30 min.Read more
