I made it without the chili powder, and it was very tasty. I think the sugar does prevent the bacon from getting crunchy though, but it still tastes very good.

Weird texture. All I had was dark brown sugar so when the brown sugar caramelized, it gave the bacon a weird chewy texture. I will try it one more time and use light brown sugar.

tried it this weekend w/out cayenne pepper. i did blacken some pieces though as it was hard to tell if it was done.

We loved it! After baking it for 20 minutes, it was still not crisp. I put it back in the oven on a new sheet of parchment and baked it for another ten minutes. It was never crisp, but it was very delicious and we ate way too much in one sitting! The few leftover pieces we had were great wrapped in a slice of bread cold out of the refrigerator.

Love, love, loved it! After making it once, I may add some cayenne pepper to it next time and thought I may even wrap it around some water chestnuts for a treat!

For years my children have liked to dip their bacon in the syrup with pancakes/french toast....I saw Paula make this and decided it was a must cook....my kids think I'm a genius! Sorry Paula..I took the credit :

I have been making this based on a Sweet Potato Queen recipe for several years now. My son asks for it every Christmas as his Big gift - is that not precious? I make a huge tin of it for him to take home with his bad self. It's a great treat, although I wouldn't recommend eating a lot of it or often. Like all things that taste good, it isn't exactly health conscious, but for a once in a while treat, have at it.
