Ingredients

  • 1/4 cup butter
  • 1 cup packed light brown sugar
  • 1 egg, beaten
  • 3/4 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon vanilla extract
  • 1/4 cup chopped pecans
  • Confectioners' sugar, for dusting

Directions

Preheat oven to 350 degrees F. Spray an 8-inch square pan with vegetable oil cooking spray.

In a small saucepan, melt the butter. Turn off the heat, add the brown sugar and stir until smooth. Stir in the egg. Stir together the flour and baking powder and stir into the brown sugar mixture. Stir in the vanilla and pecans. Pour the batter into the prepared pan and bake for 20 minutes. When cool, dust the top with a sifting of confectioners' sugar.

    I don't even have pecans yet. I was just anxious to make them and have everything else on hand. Since tomorrow's Saturday,... I'll get pecans at the store and make another batch. I made these to the letter, and I don't work for the site or anything, and have to say they are awesome. Not too sweet at all. I did add 1/4 teaspoon of salt however. They have a shiny crackly top, the edges are a little harder and crispier, and they really are chewy, in a melt-in-your-mouth way. Someone else commented that when you add the sugar to the butter that it doesn't get smooth. Mine didn't either until I added the egg and then it was smooth. You have to hurry and get it in the pan though because as it cools it thickens very quickly. Definitely making these again!!Read more

    Everyone at church that tried this recipe loved it. One of my friends husband is having a 70th birthday this month and she... wants me to make it for them.
