These were the best corn muffins I have ever eaten and my husband who doesn't even like corn bread loves them. The recipe is easy and quick. Great with soup and salad.

I made these tonight to go along with Pat and Gina Neely's chili recipe (which I would also recommend. These muffins were so easy to make, and they went perfectly with my main course. The cayenne pepper gave the muffins just enough heat that I could tell it was there, but it wasn't overpowering at all. Honestly, I could have eaten the entire pan of muffins if I let myself. I will definitely be making these again!

My husband and I loved these corn muffins! They were very moist and super easy to make. I will definetly make these again.

Did anyone write down how much baking powder and salt to add to regular cornmeal as a substitute for the self-rising kind? Paula provided it on the show, but I wasn't quick enough with a pencil.

I totally agree with you about The Food Network Website! It is so frustrating to try to navigate and half the time it just isn't working or kept up with at all. However, rather than drag down the hosts ratings by giving them one star-do what I do. Scan down to the bottom of the page to the 'contact us' icon and send a message directly to the web master for Food Network.com as well as to Food Network.com employees. The hosts really have nothing to do with the upkeep of the website so I hate to see their rating for a particular recipe drop because this website is such a nightmare. I wish they would go back to the old format!! I am hoping if enough people send them messages about the site, they will eventually fix it!
