Ingredients

  • 2 cup calamari sliced into rings (use tubes and tentacles)
  • 2 cup buttermilk
  • 2 cup all-purpose flour
  • Salt and pepper
  • Oil, for frying
  • 2 tablespoons whole butter
  • 3/4 cup sliced mild banana peppers
  • 3/4 cup large diced tomatoes
  • 1 tablespoon fresh lemon juice
  • 1/4 cup chopped scallions

Directions

Clean and soak calamari in buttermilk for 2 hours before cooking. Drain well in a large mixing bowl. Season flour with salt and pepper. Dredge calamari with flour until each ring separates easily from others. Put in sifter and shake off excess flour. Heat oil and fry calamari until golden brown. DO NOT OVERCOOK!

Start with 1 tablespoon butter over medium heat. When butter is melted, add peppers and tomatoes. Deglaze with lemon juice. Add remaining butter and scallions. Toss. Add calamari and toss. Serve

    I hadn't seen the episode in trying this recipe. I think the key is to drain the calamari well before going into the dredge, as most of the coating came off quickly in the oil and clumped into its own fritters. It also didn't get golden brown or crispy (yes, the oil was hot enough...was on medium-high on a Thermador gas range, and I knew the calamari was getting overcooked, but didn't want it swimming in underdone batter. Flavor is fine...will have to try again some time.

    Saw Paula prepare this, and like, her I am not the worlds biggest fan of banana peppers. But made this once and now it is my go-to recipe for calamari. Easy & Delicious!!

    We found fresh calamari @our Kroger and looked for a recipe. Found this one and we are hooked! I cut in strips and batter with Red's Yellow, then fry in a combo of olive oil and canola oil. The trick is not to over-fry. I also squeeze lemon juice on it while frying and after I take it out. Just get it golden and remove. Saute your tomatoes, banana peppers and green onions for a few minutes and put the calamari back in. Ask your fish department in your grocery to get this in. They can get frozen "steaks". Nom,nom,nom!!!!!!
