Ingredients
- 1 tablespoon butter
- 1/2 to 1 jalapeno pepper, seeded and minced
- 1 teaspoon grated fresh ginger
- 1 (18-ounce) jar orange marmalade
- 2 tablespoons fresh lime juice
- 1/4 teaspoon salt
Directions
In a medium saucepan, melt butter over medium-high heat. Add pepper and ginger, and cook 2 minutes, stirring frequently. Reduce heat to medium-low, and stir in marmalade, lime juice, and salt. Simmer 5 minutes, stirring frequently.
*Cook's Note: Jalapeno peppers are extremely hot. We recommend wearing disposable gloves when handling them.

This is a very versatile sauce, we had it with panko chicken strips, grilled shrimp and even on toast. I love it! Michelle

Since we made Paula's Pig on a Stick, we also had to make the dip to go with it. It is so tangy and good and the biggest surprise was to hear my boys say they loved it when they do not like marmalade! I think this would be great on chicken too.
