I cooked Carolina Gold Rice Pudding for my family and they loved it! Even my mother in law and that is saying a lot.

    Thanks

I HAD THE DISADVANTAGE OF USING A MAKE-SHIFT DOUBLE BOILER, & LONG GRAIN RICE, YET THIS RECIPE STILL CAME OUT DELICIOUS. I FELT LIKE I WAS IN A GREEK RESTAURANT! I LEFT OFF THE NUTMEG & THE SAUCE, & SPRINKLED WITH CINNAMON INSTEAD. A GREAT RECIPE, & IT MAKES A LOT----6 GOOD SIZED DISHES! CAN'T GO WRONG WITH PAULA!

I have made many, many types of rice puddings. This is by far the very best.

Short grain rice is definately the right choice and the double boiler to cook the rice was a stroke of genius. I was also apprehensive about the fruit sauce, but it was pretty good. I would soak the raisins in rum if we were to make it again.
