    Hands down my favorite recipe for squash. Absolutely do not peel the zucchini and yellow squash (see the picture. If you don't have a mandolin, a peeler will work but I love this recipe so much I ended up buying a mandolin. I usually half the butter and bump up the garlic. Be careful not to overcook it - the veggies shouldn't get soggy. So good!

    Made this recipe with Bobby's Simple Tilapia recipe, it goes well with it. Zucchini, squash and carrots was delicious. My fam loved it especially my husband who doesn't usually eat veggies. I'm making this again tonight.

    Really good salad. My husband and toddler also liked it. I didn't have a lime so I just used a splash of oj instead. Would likely be just as good chilled.

    Nice change from the typical chopped veggies sauteed in olive oil. I don't have a mandoln so I used a peeler to make the ribbons. I think the veggies stayed crispie--my preference--because they didn't have to be cooked very long. Paired this with salmon and it made a nice presentation. Definitely on my repeat list.
