Very easy! We used mild cheddar and 1/2 a slice of pepper jack. Very tasty!

I am a Mexican food junkie but have never made quesadillas. Not only was this recipe delicious but it was so quick and easy I don't know why I didn't try it before!!

I was so glad to find this recipe because my 5 year-old grandson wanted a cheese roll-up from Taco Bell yesterday on the way home from church. I am teaching him to cook (he's my sou chef and he will love doing this recipe when he comes again this weekend. Since he loves American cheese, he can do it "his way"! I also want to comment on the wonderful manners of your niece and nephew. It is so nice to hear "yes ma'am" and "no ma'am". My husband and I were both born in Georgia and raised the "old-school way". It is depressing to hear so much "yeah" and "nope". Congratulations to those precious polite children. I had begun to hink politeness was "gone with the wind".
