Ingredients

  • 2 cups self rising flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon cayenne pepper
  • 2 sticks butter, at room temperature
  • 2 cups shredded sharp Cheddar, at room temperature

Directions

Preheat the oven to 300 degrees F.

Sift the flour, salt and cayenne into a bowl and reserve. With an electric hand mixer cream together the butter and cheese. Add the flour mixture 1/2 cup at a time until the batter is smooth. Scrape the batter into a 1 gallon resealable plastic bag. Cut a corner from the plastic bag and on an ungreased sheet pan, pipe 2 rows each for every straw, about 5 inches long and 2 inches wide.

Bake for 10 to 15 minutes or until lightly browned. Remove to racks to cool.

    Easy to put together, but still don't even bother. Made for a Southern BBQ that we were invited to...and they came out so... poorly that I trashed the entire batch as I would be embarassed to share with family. Several issues, not just one. Based on other reviews I expected that the 'dough' would be too thick for a pastry bag...this is true, I ended up hand rolling...which would have been okay if they tasted good. Unfortunately these tasted awful: too salty, heavy flour taste and they did not hold together well, breaking apart if not picked up very carefully.Read more

    I tried both the recipe as-is on this site and also the altered recipe mentioned in the reviews. Personally, I prefer the... site recipe. However... I've only tried the recipe with asiago cheese, not cheddar. I wasn't able to use a pastry bag and tip -- the dough was too thick. I ended up rolling out the dough, cutting into strips, then twisting (a bit more time consuming than I would've liked). I served the asiago cheese straws with a spinach dip (the veggie soup mix powder w/sour cream kind), and they were a HUGE HIT.Read more
