Ingredients
- 24 fresh mushrooms, stems removed
- 1 (10-ounce package) frozen chopped spinach
- 2 ounces cream cheese
- 4 ounces feta cheese
- 1/2 cup finely chopped green onion, with tops
- 1 teaspoon House Seasoning, recipe follows
- Salt, to taste
- 1 cup grated Parmesan
Directions
Preheat oven to 350 degrees F.
Wipe mushroom caps clean with a damp paper towel. Thaw spinach in a colander; squeeze out as much moisture as possible. In mixing bowl, combine all ingredients except mushrooms and Parmesan. Mix well. Fill mushroom caps with mixture and place on a cookie sheet. Sprinkle Parmesan on top. Bake for 15 to 20 minutes. Serve warm.

Delicious, nutritious and easy -- what more could you ask for? I did not measure anything. I watched the video and all the ingredients looked about equal, so that is what I did -- used equal amounts of spinach, cream cheese and feta cheese. Most appetizers are a lot of work for not much food. These were very easy and I thought they were delicious!

No recipe for the house seasoning followed so I was unable to use it. They may have had a better flavor if it had been given!

Thank you Paula Deen!! I made these yesterday for Christmas, and they were a hit!! I used cremini mushrooms and added crabmeat. Yummy!! Yet another Paula Deen recipe to my collection.
