The recipe was very easy to make and created a tasty outcome! Be sure to use mini mushrooms (I bought regular-sized portobello mushrooms and had to double the cheese recipe! The changes I would recommend are to blend bread crumbs and parmesan cheese to coat the mushrooms and use less feta cheese in the mix because it was a tad too salty.

I prepared these stuffed mushrooms for Christmas dinner this year because the combination of the cheeses and spinach in the mushrooms sounded great. I used a combination of regular white mushroom caps and the caps from some baby portabellos. Both were good, but the portabello mushrooms were particularly delicious.
These Stuffed Mushrooms were the hit of Christmas dinner too. My daughter-in-law and I had to remind the teenaged kids that we needed to save some of the mushrooms for other guests because they liked them so well (and they tend to be picky eaters. This is destined to be one of my "classic" recipes.

I LOVED these. I've tried a lot of different recipes and this is by far the best!! I baked them in butter and also put the steams in the bottom the pan with the butter. The Mushroom, cheese juice mixed with the butter makes a great topping.

Delicious!!! Made these yesterday for Christmas as one of my appetizers - everyone loved them ! - The only tweek I made was half Feta & half Gorgonzola & they were sooo tasty! Really nice change from the bread crumb stuffing, don't think I will ever go back to that - Thank you Paula !!

everyone in my family loves mushrooms, except me. But these were delicious. I always get compliments on the recipe, big hit at parties and gone before you know it. COOKS BEWARE...feta, parmesan, house seasoning and salt give it a very powerful punch...a little TOO salty for me. I would recommend adding the salt and house seasoning to taste rather than following the exact measurements. Otherwise, it's great. Thanks Paula.

Love cream cheese, love spinach and mushrooms. Must be the brand of spinach and feta because I was dying to try these plus it looked simple and quick. I couldn't find parmesian that you grate yourself so i used the already grated. Turned out to be really gross I ended up dumping the filling out of the caps and just ate the mushrooms.

These are great and look like they took forever! I sauteed my spinach, 2 cloves of garlic and the onion to cook the water out of the spinach and used mozarella instead of feta because it was what I had on hand! I also brushed the mushrooms with a worchestershire and garlic powder combo before stuffing! I have my mom's birthday Wednesday and will definitely be making these to go along my lasagna!
