I've made these a few times now. I've made the cream mixture prior.. and prepped the mushrooms, then filled them right before guests arrived and popped in my toaster oven. I've also completely assembled them and put them in the fridge until I was ready to bake... very easy, and taste amazing. And if you don't like Feta.. use another cheese. These are wonderful and a definite staple in my appetizers at all my parties : Thanks Paula!!!

I have made these twice and loved them better the next day, especially for brunch served alongside some scrambled eggs. I served them as an additional vegetable with our prime rib and lobster dinner and they were great as a side dish! Everyone loved them. Easy to make-a bit time consuming but I just put my sister to work and we talked, drank wine I cooked and she made these great mushrooms while in the kitchen so time went by fast.

This recipe is terrific. Easy to make. AND NO BREAD CRUMBS!!!! I used baby portobella mushrooms and followed the recipe exactly. I cooked them, put them on a microwavable serving plate, and just microwaved them until hot before serving. Everyone loved them and none of them were left over.

this recipe is SOOOOO good. I have several vegetarian friends, so this is such a wonderful flavorful recipe for anyone. I did tweek a bit with adding sauteed minced shallots and garlic to deepen the flavor as well as a pinch of cayenne pepper - really enhances the flavor. This is an absolute winner at anytime of the year. This is basically an every party staple item at my celebrations. Everyone just LOVES when I make these - never one left over...........say no more.

I love this recipe! Anytime I serve this, they are gone within a few minutes.
I substituted frozen spinach for fresh, it was a little easier. Just make sure you chop VERY fine and remove stems. Also, I sprayed the baking dish really well and the bottoms came out perfect. Also, I used a parmesan blend. Thanks Paula for another wonderful and easy recipe!

I thought these were great. Easy, fast and tasty. The next time I will add either a bleu cheese or gorgonzola as I am not a fan of the feta cheese. I also cut back on the salt in the recipe. Thanks, Paula.

Too much cheese for me. Also, the mushrooms get a bit dry on the bottom. I'd try rubbing them with a drop or two of olive oil. I'd also cut the cheese and consider adding some finely chopped sauteed onion to the spinach mixture instead.

Tried these as described, but I think the mushrooms could have been marinated to provide more flavor.... Sorry Paula!
