    I made this with biscuit dough, as some other reviewers suggested...maybe since I used Grands biscuits, it would account for the thickness of the dough! Next time I will try either pie crust or crescent dough for a thinner outcome. The filling was delicious, even omitting the jalapeno. Additionally, I baked mine instead of frying, 350 degrees for 30 minutes with an egg wash over the empanadas before baking.

    I enjoyed this recipe, but in stead of pie crust I used pre-made empanada dough disc found in the Latin frozen food section. The disc come in two sizes, 4" and 5". Just defrost, flatten with rolling pin if you find the dough too thick,fill, close, and fry.

    One question - if you want to freeze them, do you cook them first - then flash freeze?

    I made just a little bit easier and healthier version.. I used the diced chicken, 1 package mexican seasoned cheese, 1 package of softened low fat cream cheese, and 3/4 cup of medium salsa! Then instead of frying, I put an egg wash over them and baked them for 15 minutes at 425 degrees. They were great!

    I didn't have any left. Everyone absolutely loved them. I baked them at 350 degrees for about 30 minutes. I brushed them with egg wash before baking. I'm just too lazy to deep fry sometimes!

    The empanadas were to die for!! I made them for my best friends birthday and everyone loved them! I read another review saying that the pie crust falls apart and to try cresent roll dough. I tried that and it worked much better! The pie crust has to fry longer, but the cresent rolls are literally a flash fry and their done. They hold together better- and they aren't as flaky. But some people liked the pie crust and some people like the cresent rolls. All in all they are fantastic!

    This was delicious! The pie dough did come apart a little when it was done cooking, but it still was great! And the sauce....yummy too. Definetly will do this again.
