My husband made the Empanadas with the pie crusts, while the flavor was great the crust was difficult to manage. However, the next day he tried it again with cresent rolls and biscuits and they were marvelous and much easier. I guess if you can cook like Paula D the crust is best but for the rest of us, try the biscuits and cresent rolls.

This was delicious. I did make a few alterations and left out some of the spice and bell pepper. I also used a larger cookie cutter (about a 5" it worked much better. I am going to try this using flour tortillas like burritos and frying them. Thank you Paula!

I was an audience member of Paula's Party, where this recipe was featured. I couldn't wait to get home and make it with my 6 year old daughter. It was so fun and easy. She truly enjoyed filling, folding and crimping the scrumptious Empanandas. I left out the Jalapeno, because I was making them for the kids, but they were still awesome. My oldest son stated that they were the best snack he had eaten. Thanks Paula
