Ingredients
- 1 tablespoon vegetable oil
- 6 medium yellow summer squash, thinly sliced
- 1 large Vidalia onion, thinly sliced
- 1 tablespoon butter
- 1/2 cup grated Parmesan
- 1 cup shredded sharp Cheddar
- 1/2 cup sour cream
- Salt and freshly ground black pepper
- 1 sleeve crackers, crushed medium to fine (recommended: Ritz)
Directions
Preheat the oven to 350 degrees F. Grease a 2-quart casserole dish.
Heat the oil in a large skillet over medium heat. Saute the squash, onion, and butter until soft. Transfer to a bowl and stir in the Parmesan, Cheddar, and sour cream. Add salt and pepper, to taste.
Place in the prepared casserole dish and sprinkle the cracker crumbs evenly over the top. Bake for 20 minutes or until the top is golden and bubbly.

I read some reviews before I make a dish and I did here. I cut the squash and zucchini a little thicker than what is posted. I cooked them till about el dente or alittle more but not mushy like the video showed. I also finely chopped 3 garlic cloves just cause I like garlic. A reviewer said it was bland, so I also added about 5 hard shakes of Mrs Dash seasonal blend. It come out very tasty.

Delish! Really like this recipe. I used fresh parm as I had some already instead of the "sprinkle" kind he uses in the video. Don't leave out the Ritz crackers as they made a yummy crunchy topping that was a good compliment to the squash and onion. I bet cream cheese would be good as a substitute for the sour cream too. My DH doesn't like sour cream but didn't mind it in this dish. You don't bite into it and taste sour cream-it just adds a savory element (along with the cheeses to contrast with the sweetness of the squash and onion.

Very easy to put together. Sauteed the veggies until al dente to leave some chew and texture. Mixed about 1/3 sleeve of Ritz into the casserole and used half sour cream and half Philly garlic cooking cream. On top mixed whole sleeve of Ritz crumbs with extra cheddar cheese for crispy topping. Had texture and very flavorful.
