So tasty and easy to make. Use a mixture of yellow squash, pattipan squash and zucchini. Will make this again! Yum.

This recipe was very tasty. I had a huge summer squash that I needed to use so I just diced it and sauteed it with the onion. I also added about a teaspoon of Emeril's original essence which tasted so delicious with all the cheese. Soooo good!

Easy and Tasty! It was delicious with a great texture. I didn't have sour cream so I used Ricotta. Strange substitution but it worked and was delicious!

This was truly 5 stars. We did change a few things to use ingredients we already had in our fridge. We used 1 cup of a milder cheddar and then 1/2 cup of feta cheese. We were both raised in the south, and we agree that this was the best we have ever had!!

I upped the the cheddar to 2 cups, sour cream to 3/4 cup, added 1/4 cup mayo, 2 beaten eggs, and about 4 cups of cooked, shredded chicken breast (2 large skinless boneless breasts. It made a meal, enough to serve 8. Absolutly delicious!! My family loved it. By the way, for anyone on a low carb diet this is perfect. It has 11 carbs per serving (leave off the crackers and it is only 8.
