    This was truly 5 stars. We did change a few things to use ingredients we already had in our fridge. We used 1 cup of a milder cheddar and then 1/2 cup of feta cheese. We were both raised in the south, and we agree that this was the best we have ever had!!

    I upped the the cheddar to 2 cups, sour cream to 3/4 cup, added 1/4 cup mayo, 2 beaten eggs, and about 4 cups of cooked, shredded chicken breast (2 large skinless boneless breasts. It made a meal, enough to serve 8. Absolutly delicious!! My family loved it. By the way, for anyone on a low carb diet this is perfect. It has 11 carbs per serving (leave off the crackers and it is only 8.

    Yum! I made this tonight. I used half a sweet onion diced and shredded Parmesan. It was excellent! I accidentally put too much salt in, so it was a bit salty, but still delicious. Oh, I didn't use Ritz crackers, I used Town and Country butter crackers. Fortunately, my husband and 6 y/o aren't crazy about squash, so there were plenty of leftovers for me! :

    This recipe was super good and super yummy. The only thing I will change next time is cutting up the onions some. It says to thinly slice (which I did but they were not very manageable when eating. I will quarter the slices. One final note. I did use grey squash and purple onion and it was still awesome. Can't imagine how great with a vidalia onion. thanks. Paula

    It is the best squash casserole recipe I have ever tasted...I made it for Thanksgiving,Christmas and New Years and my family and friends loved it

    Excellent recipe, even better with 1/2 can drained diced tomatoes. Asian Chili Sauce works well too.

    Love this recipe! I don't use the sour cream. I use more cheese, more like 3 cups and I change it up with Mexican cheese blend and Monteray cheese, pepper jack cheese, etc. I also make sure to put some pats of butter on the crackers or sprinkle some oil on the crackers before I put the casserole in the oven. The buttered crackers makes the crust extra yummy!!!

    This was a hit on Christmas (even with the daughter who doesn't like squash. Served as one of many sides with ham and received excellent guest reviews. I didn't have enough sour cream as I tripled the recipe, so substituted mayonnaise for half the sour cream. I suspect this made it even better. I had to print the recipe to send home with people after dinner. This is easy southern classic squash casserole - yum.
