Cherry Cream Cheese Tarts

12 tarts

  • 2 (8-ounce) packages cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon pure vanilla extract
  • 2 eggs
  • 12 vanilla wafers
  • 1 (21-ounce) can cherry pie filling or other pie filling

Preheat oven to 350 degrees F.

Place a paper cupcake liner in each cup of muffin pan. Beat cream cheese with a handheld electric mixer until fluffy. Add sugar and vanilla, beating well. Add eggs, 1at a time, beating well after each addition. Lay a vanilla wafer, flat side down, in each muffin cup. Spoon cream cheese mixture over wafers. Bake for 20 minutes. Allow tarts to cool completely. Serve with cherry filling on top, or pie filling of your choice.

    really easy to make and very good but next time I think I will cook them longer maybe five minutes or so.
    Delicious and so easy to prepare!

    I used Tennis-biscuits (South Africa as base instead of wafers. And used granadilla (passion fruit pulp as topping - very tasty!
    I love these tarts ( not a true cheesecake for those complainers They are suppose to sink and crack. That is where you put the Filling ! I also have add Amaretto in place of vanilla . They go fast everytime I bring them anywhere . Remember people it dosen't have to be perfect to be good.
    I made them for a football team, they loved them! And they tasted Great!!!! Super easy to make!!!
    Love them !!! ... however I can only give them a 4 because mine sunk in the middle.....
    You're doing it right! They ARE supposed to sink in the middle. The filling goes inside that well. :-)
    Love these cream cheese tarts, i think they are perfect, change i only made is use 1/2 cup of sugar instead of the full cup, i used the full cup before and i personally think it comes out really sweet, so 1/2 is good, and it still comes out pretty sweet!
    The name is wrong, they are mini cheese cakes not tarts. They're good, cute, easy and convenient. They are not amazing, they need something, maybe some lemon zest. I also had to cook them longer than 20 mins (I am at a high altitude though. They do stick to the paper and the cookie is kind of pointless. It just gets kinda chewy and doesn't fill the whole bottom. I will make them again when I want cheesecake, not tarts. I will probably add lemon zest and a graham cracker crust.
    So quick and easy and yummy!
    Tried these for the first time yesterday...they were great! Couldn't find any Vanilla Wafers or Cherry Pie filling so I used mini Chocolate Chip cookies and Strawberry Pie Filling instead. They tasted just like store bought cheesecake only they were mini and more adorable! =
    I made these for a church dinner but I used splenda instead of sugar & no sugar added cherry pie filling and they turned out great. Everyone loved them & couldn't tell that they were sugar free. My Mom & I are diabetic & these were a great treat for us. Thanks Paula for giving me an easy & quick treat for us.

    I am giving these 2 starts because they are tasty, once I modified a bit. I added some lime juice, 1/2 cup of sour cream and an extra egg. I have made them as directed and they seem to lack something. BUT overall, presentation is a very important part of any dish, and these ones not only deflate (even leaving them in a cracked oven! terribly, but also shrink, so you do end up with very small treats. Thank goodness for the cherry filling, as they lack any presentation without it.
    They are amazing, they are so cute and so easy to make! As a topping because most people that I am making this for are not fans of fruit toppings, so i made a thin drizzle of caramel and hopefully people like them! i am making this for thanksgiving. :-
    I made these and it didn't turn out.... they over flowed, and when they cooled it just looked horrible.... I dont know if i poured too much in the pan or if i over baked them.. But i will try to make them again..
    This is an old Southern Living recipe I have been making for years. The only thing I add is a thin layer of sour cream slightly sweetened with powdered sugar, then the fruit topping. ALWAYS a hit! often requested:

    They tasted pretty good. Are they suppose to be really soft? Or was I suppose to refrigerate them. I don't bake much so I'm not sure
    DELICIOUS! Instead of pure vanilla extract I used 2 tbsp of imitation vanilla but other than that I followed the recipe exactly. Quick and easy to do and my family LOVED it. I will surely make this again.
    delicious and simple. easy to transport to potlucks or when you a yummy throw-it- together dessert they can be kicked up with fresh fruit instead of pie filling or drizzled with choc hazlenut spread. wouldn't be my go to, to die for cheesecake recipe, but it isn't meant to be. These are simply delicious mini cheesecake desserts.
    Made these for 4th of July and they certainly were festive. They were also yummy, however they did not turn out as I had imagined. They weren't quite as tall as Paula's photo (perhaps it was my mistake) but they were certainly yummy. I probably will not make them again, but as far as taste go, it was great. 4 stars only because they did not turn out as amazing as I had prepared for :b

    I made some a while back and was never able to keep them in my refridgerator! Between my kids and the neighbors I had to sneak some just for me! I loved them. However, I did not use the wafers, just the cream cheese and cherries!

    These mini cheesecakes are simply divine and so simple to make. I made these for a party and did an assortment of blueberry and cherry - and they disappeared in no time. Great for entertaining!
    Made these for a dinner party, so easy, and everyone loved them. I noticed some of the negative reviews involved said they were messy. I used aluminum cupcake liners, and popped them out before serving. It worked great! I'll be making them again for sure!
    Mrs. Paula these are the best little "cheesecakes" ever and sooo easy! I have made so many I've lost count. They go to church socials, tea parties, even afterschool snacks for my 3 beautiful children or an after work bite for my hard working husband. I even change up the fillings and cupcake liners to match the occasion. Peach pie filling is yummy with these! Thank you and God bless you and your family!
