Ingredients
  • 2 (14 1/2-ounce) can green beans, drained and rinsed
  • 3 cups diced cooked chicken
  • 1 medium onion, diced and sauteed
  • 1 (8-ounce) can water chestnuts, drained and chopped
  • 1 (4-ounce) can pimentos, drained
  • 1 (10 3/4-ounce) can condensed cream of celery soup
  • 1 cup mayonnaise
  • 1 (6-ounce) box long-grain and wild rice, cooked according to package directions
  • 1 cup grated sharp Cheddar
  • Pinch salt
Directions

Preheat oven to 350 degrees F.

Mix all ingredients together and pour into a greased 3-quart casserole dish. Bake for 20 to 25 minutes or until bubbly.

I've made this recipe dozens of times and never tire of it. I love the crunch of the water chestnuts, but I usually omit the onions. I am ashamed for the so called "adults" who can't swallow their misplaced pride and bring your shows back. Alot of the new programs aren't even worthy of airtime, it's easier to just change the channel. THOUSANDS of us have spoken Food Network, when are you going to listen?! Each one of you should examine every SECOND of your own lives , then cast the first stone. This was a great casserole! I steamed my own green beans because I didn't want mushy canned ones and it made a big difference. It was super super yummy. I took some other reviewers advice and added some spices - garlic powder, garlic salt, and cayenne pepper. Despite the fatty ingredients (mayo, cheese, cream mushroom soup it was not heavy tasting. Was a little skeptical about all the mayo, but it wasn't as heavy as I was expecting. I cooked the chicken with salt, pepper, and garlic powder to add a little more flavor. I made this over the holidays - one for my 94 year old mother, and one for my husband and me. Absolutely delicious!!! I loved every mouthful, and it also makes a great dish after turkey day - I just substitute cooked turkey for the chicken. It's colorful, tasty, and I love the crunch of the water chestnuts. This was not inedible, but very bland. I did put french fried onions on top of the casserole and I felt that this addition truly saved the dish. No one in my family was a fan of this recipe. I used fresh cooked chicken, freshly cooked green beans and even made my own homemade cream sauce I use for my other recipes and the combination of the ingredients in this recipe just failed. I think maybe it was the mayo, and I did use real mayo as other reviews suggested. This dish makes a lot of food and I was stuck with a huge dish of leftovers that no one would touch. I made this for my husband and I last night for dinner and it was D-licious. My husband will eat leftovers until they are gone but I dont know if I would suggest it for just two people because it makes A LOT. But besides that, it really is good. I am a very picky eater and I loved it. It's really easy to make, it's cheap and it's quick. My ONLY complaint is that it is kind of thick/creamy. Next time I make it, I am only going to use 1/2 a cup of mayonaise even though the recipe calls for a full cup. And I'm going to try to use 1/2 a can of cream of celery soup and 1/2 can of mushroom soup to try to make it less creamy (the recipe calls for one full can of cream of celery soup. Don't get me wrong this recipe was VERY good as is but it was just a little too thick for me. This is a delicious and easy recipe. I made it as a half recipe for myself. So, with 1/2 of everything (soup water chestnuts, etc.left in my fridge,, I decided to make it again but with canned tuna. As with all of Paula's recipes I have to cut the fat. Also don't like cream of celery soup and have tried this using cream of chicken & cream of mushroom soup. Also used fresh string beans blanched, and broccoli, celery, onion & red peppers, also used asparagus successfully & omitted the water chestnuts & pimentos which my family hates. My husband really enjoyed this recipe. I did make some changes though. To eliminate a step, I added the onion to the rice the last five minutes I was cooking it. I also used fat free yogurt instead of mayo to prevent this from being a really fattening recipe. I seasoned the yogurt with salt, pepper, and garlic powder, and it surprisingly, really worked. I think it is a bit oily, with all the cheese and mayo. I might try to substitute some cream of chicken soup for some of the mayo. I also added some salt, pepper Old Bay and dijon because I thought it might need a little seasoning. Might use Mrs. Dash next time. I didn't have pimentos so I used capers that I rinsed. I love this recipe. Yes, it doesn't really *look* very beautiful... although adding some french fried onions on top helped... and it's not very healthy... but it's very good. Like addictively good. I made the recipe as is because I like to do that the first time through. It's very good, and I think it has plenty of flavor (I added about 1/2 tsp of salt total However, I will probably try substituting low-fat and low-sodium ingredients next time. I used 1 can of green beans & 1 can of asparagus. Used 1/2 cup mayo & 1/2 cup fat free sour cream. Didn't have the pimentos so used 4 ounces of roasted red bell peppers. Couldn't find 6oz. box of rice so used a 4 oz. & added a 6.8 oz. box of chicken rice & cooked them together, thinking that I would add what I wanted at the appropriate time. Next time I'll use the 4 oz. box it was sufficient. After it was done, I crushed an end-of-the-bag nacho chips & sprinkled over the top. Great! Not runny & I never added curry! I baked it in a 9X13 dish and next time I'll put it into two smaller pans and freeze one for later. I love this recipe because it is one that you can make or replace items with your families favorites. With the garden coming on, I look forward to using fresh green vegetables in it. Oh, I didn't have cream of celery soup and so I used cream of asparagus soup instead. DRAIN all the canned stuff very well or it will be runny! I will keep this recipe! This needs quite a bit of adjustment before I can give this a higher rating. I didn't think the water chestnuts added anything to this dish but a weird texture unexpected in a casserole. And I like water chestnuts. But they belong where you see them most, in Asian cooking. Secondly, this dish needed a...flavor. I tasted the mixture before baking it and decided it tasted reminiscently like Thanksgiving. So I added sage and Craisins dried cranberries. Cest manifique. The only thing I'd do next time is either to sprinkle bread crumbs on top OR add a later of previously unbaked stuffing on top. --Why not try the SOY milk product section. If that is not do-able, then try a different direction. --Make your own mayonnaise (to avoid any powdered milk additives)...which is just eggs and oil with salt & maybe pepper and for tang try a splash of lemon or lime juice. (I am sure there is a homemade mayonnaise recipe you can locate.) --Instead of canned milk based soup, try jar or canned tomatillo sauce with a Mexican box rice & corn & maybe some type of canned bean. --Make your own Cream of Chicken or Cream of Mushroom only make it with ground up mushrooms in a thickened Soy Milk & cornstarch mixture.
