Chicken and Rice Casserole

6 to 8 servings

  • 2 (14 1/2-ounce) can green beans, drained and rinsed
  • 3 cups diced cooked chicken
  • 1 medium onion, diced and sauteed
  • 1 (8-ounce) can water chestnuts, drained and chopped
  • 1 (4-ounce) can pimentos, drained
  • 1 (10 3/4-ounce) can condensed cream of celery soup
  • 1 cup mayonnaise
  • 1 (6-ounce) box long-grain and wild rice, cooked according to package directions
  • 1 cup grated sharp Cheddar
  • Pinch salt

Preheat oven to 350 degrees F.

Mix all ingredients together and pour into a greased 3-quart casserole dish. Bake for 20 to 25 minutes or until bubbly.

    Great dish. Wonderful Paula Deen. She should get the O network to give her a show! I bet Oprah would even give her a second chance!
    I've made this recipe dozens of times and never tire of it. I love the crunch of the water chestnuts, but I usually omit the onions. I am ashamed for the so called "adults" who can't swallow their misplaced pride and bring your shows back. Alot of the new programs aren't even worthy of airtime, it's easier to just change the channel. THOUSANDS of us have spoken Food Network, when are you going to listen?! Each one of you should examine every SECOND of your own lives , then cast the first stone. This vendetta has gotten way out of control, you guys REALLY jumped the gun when you pulled Paula off the air. You acted like school children. Grow up and right what was wronged! Maybe you'll be able to sleep again at night.

    Love this recipe and I like the others think this is an outrage how the network handled this situation. I no longer watch the food channel and also cancelled my subscription. Although I miss some of the other cooks, I believe we should stand behind Paula and hold our ground. Keep the faith
    My husband and I liked this. The only "off" thing for me was that there seemed to be a "smokey" flavor and I do not like smokey. I have attributed it to the pimentos and will omit that the next time I make this. It is very easy and quick to put together.
    A great southern tradition, just like you, Paula - we miss you! Too bad the New York producers can't get over themselves. Oh, and a wonderful recipe, too. :)
    This was great! I doubled the recipe for friends and it was gobbled up by four teenagers, who actually called the next day to tell me how good it was. The water chestnuts add a great crunch.
    Very tasty!! This is our absolute favorite chicken and rice casserole recipe! I have served it to so many people, and everyone loves it!!! Definitely makes a difference when you cook the onions first!!! So easy

    Oh my!! I wrote this recipe down in our family recipe book. I've made this recipe several times. One time, I forgot the green beans and it was still awesome. I couldn't stop eating it. I agree with the post from July 4. My family and I are behind you Paula and we love you and your recipes.
    Great dish Paula, as with most of your dishes. Please don't let these fools get you down! The majority of people see the double standard and are furious. I used to watch food network religiously. Since I've heard what they wrongly did to you, I have not watched one episode. I didn't think I could do it because there are other chefs I really like, and I was addicted.. But it's a lot easier than I thought, and the right thing to do. And I am canceling my subscription to their magazine ( I already have a subscription to your magazine. We are behind you Paula!
    A wonderful dish made by a wonderful lady! Keep smiling, don't let them break your spirit, as you said, show me that person that has never said or done anything wrong! When you are gone off here so am I!

    This Chicken+Rice Casserole was fantastic! I like my food with a lot of different vegetables and this hit the spot. 
    Paula, Stay Strong! It's really easy for people to judge others mistakes. You have apologized for a slip of the tongue. Humans make mistakes a lot. You can't please everyone, that's just the way of the world. The most important One has forgiven you, that's all that's important right now. 
    I know it's hard, but you will have to just put your trust in God and take a vacation!

    This was a great casserole! I steamed my own green beans because I didn't want mushy canned ones and it made a big difference. It was super super yummy. I took some other reviewers advice and added some spices - garlic powder, garlic salt, and cayenne pepper. 
    Despite the fatty ingredients (mayo, cheese, cream mushroom soup it was not heavy tasting. It was deceptively light and tasty - ate way too much! My husband said "This is a keeper!!!"
    Chicken and Rice Casserole is the Delicious foods I ever tested. Actually I am used to eat this one.
    I used rotisserie chicken for this dish and it was gone.
    I love Paula's cookin' but this is bland city; try fresh beans and add a little soy sauce and thai pepper sauce to take this dish East and put some jewelry on this pig.
    HUH??? This isn't an asian dish, don't fix what ain't broke!
    My family loves loves loves this recipe! And it only gets better the next day for leftovers. We love cheese so we put more then is called for on the topping.
    My family isn't a fan of heavy, creamy dishes. Even so, this dish lacks flavor ... paprika helped.

    It was superb! What a wonderful dinner, it has everything in it. Next time I make it I think I might add a little pepper, garlicpowder, and onion powder just to enhance the delicious flavors.
    It was quick and easy. It is easy to change per your own personal tastes.
    Was a little skeptical about all the mayo, but it wasn't as heavy as I was expecting. I cooked the chicken with salt, pepper, and garlic powder to add a little more flavor. I also omitted the water chestnuts because they just didn't seem to fit. It's a good overall recipe that can be played to your tastes. Will keep this in my recipe box.
    This is very good. It's a LOT of mayo, but it doesn't overbear the other flavors...

    I made this over the holidays - one for my 94 year old mother, and one for my husband and me. Absolutely delicious!!! I loved every mouthful, and it also makes a great dish after turkey day - I just substitute cooked turkey for the chicken. It's colorful, tasty, and I love the crunch of the water chestnuts. Another winner, Paula!
    This was really good. I left out the water chestnuts though. My family loved it.
