Ingredients

  • 2 (14 1/2-ounce) can green beans, drained and rinsed
  • 3 cups diced cooked chicken
  • 1 medium onion, diced and sauteed
  • 1 (8-ounce) can water chestnuts, drained and chopped
  • 1 (4-ounce) can pimentos, drained
  • 1 (10 3/4-ounce) can condensed cream of celery soup
  • 1 cup mayonnaise
  • 1 (6-ounce) box long-grain and wild rice, cooked according to package directions
  • 1 cup grated sharp Cheddar
  • Pinch salt

Directions

Preheat oven to 350 degrees F.

Mix all ingredients together and pour into a greased 3-quart casserole dish. Bake for 20 to 25 minutes or until bubbly.

    This is a great casserole - it reminds me of one my mom used to make when I was little. My husband loves this every time I... make it. The greatest thing about it is that you can experiment with it and have fun trying to make it even better, though I think the recipe is wonderful as-is! I'm looking forward to making this many more times in the nearby future.Read more

    It never ceases to amaze me the negativity of such an unusual concentration of haters. This is a great recipe. It works... well just by itself. Cooking is all about taking some 'poetic justice' and, yes, this recipe can be made even more fantastic with a substitution here and there. I substitute canned green beans and pimentos with sauteed fresh asparagus, broccoli, and red bell. And, against my wife's will, I have to respond to those 'smell' complaints. Are you serious? What in the world does good food smell like to you all? Clearly there is a discrepancy in the realm of great food reality versus whatever everyone else complaining eats.Read more

    If you make this recipe with regular long grain rice, it is good, but if you want to make it excellent, try substituting the... rice with a traditional risotto and mix it in! I've made it this way several times and it is a very popular request when people come over for dinner (many say it's the best chicken and rice casserole they have ever had! Traditional Italian Risotto: 1 large onion 2 Tablespoons olive oil 4 Tablespoons butter 5 cups chicken stock 1 1/2 Cups arborio rice Saute onion in olive oil and butter until soft, add the arborio rice and coat with the the onion mixture, add stock one cup at a time (be sure to let the stock absorb into the rice before adding more!), then as soon as all the stock is in the rice and completely absorbed, add to the recipe!     My men, hubby and two boys loved it! After reading through all the other reviews, I did some changes for the better. First,... use a larger box of rice, 6oz is not enough. Use roasted red bell peppers from a jar, I used two peppers. Use only 1/2 cup of mayonnaise. I used 1 can of green beans, and 1 can of carrot. This is good, but not the best Chicken casserole Ive had. Read more

    Not a fan... I think 1 cup of mayo is too much!! I think if the recipe was altered it would be great. My casserole smelled... like.. which grosses me out. I used just one cup too. My brother and father seemed to really enjoy it.. Maybe its a boy thing! I am a huge fan of Paula Deen but this is not my fave. To make it better next time i am going to try adding more veggies, less mayo and maybe use creamy chicken soup instead like someone suggested below. Read more

    Raided the pantry and freezer for this chicken casserole: ommitted green beans, pimentos, cream of celery soup, and mayo...... substituted frz broccoli, cream of chicken soup, sour cream, liltle fresh parsley and chicken montreal seasoning, and added pack of bacon bits..... fabulousoooo! Even my pickiest chicklette loved this casserole! Thnx Paula! Read more
