This casserole was great! AMAZING , AND NOT BLAND! You can only expect too much out of comfort food, those of you who called it bland! I thought it was TERRIFIC and the whole family did too! One of my fathers favorites now! I loved having the water chesnuts in there, it added a GREAT texture! We also LOVE to have a crunchy topping, so we made the best out of the end of the bag potato chips that are all crumbled up, and just laid them right on top of the casserole. It added a wonderful CRUNCH!
Great Job Paula, we love you and your food!

Excellent Recipe. Everybody absolutely loved it. The only thing I changed was the wild rice. Instead of the wild rice I put Mexican Rice with Corn, it added a nice flavor.

Paula is your cook, NOT your doctor. All recipes, given the guidelines of what the contents are can be modified to a healthy content by the ingredients adjusted accordingly.
I have a household of high blood pressure family members as well as a diabetic and one with heart problems.
Use the guidelines of the ingredients and adjust to low sodium, sugar (use Spenda or another substitute, use no yolk, etc.
I consider this MY responsibility to adjust to healthy NOT hers and do so accordingly by READING the labels and purchasing contents and using in lieu of the items that would be not conducive to my family members Health condition.
You can do this by researching online, it is a beautiful tool to help you know how to do so and come out with the same (as close as it will ever be and just as good in taste. I have kept my Mother's blood sugar in an EXTREMELY healthy range and it included what onewould say is Unhealthy. You have to do this for YOURSELF.
I appreciate the guidelines and contents Paula has provided and continue to research on my own for MY familys health needs.

This is a good dish, but I made a few alterations. I added the curry as many others suggested, and I'm thankful I did becuase I think it would have been really bland without it. I also added a combo of frozen green beans and frozen peas which worked out nicely, and added 2 cloves of garlic I sauteed with the onion. I also used low fat mayo and low fat cream of celery, which could be why mine came out a little bland. The water chestnuts were a great addition and I left out the pimentos simply becuase I didn't have any on hand. I think next time I may add some sliced mushrooms and garlic salt and some crushed ritz crackers on top would be great!

My mother in law made this for me and my husband this weekend. She used broccoli for the green beans and had to skip the pimentos, just because we didn't want to make a trip to the store. It was absolutely amazing. Thanks for a wonderful recipe. For those of you thinking of trying it, do it. I would also like to try it with more vegetables in it the next time I try to make it.

I added curry powder as countless reviewers have suggested and I can't imagine this dish without it.....actually I can and it'd probably be pretty bland. I did make the mistake of adding too much curry powder the first time. I think the best amount is about a teaspoon. I also left the chicken slightly undercooked (I cooked mine in foil packets in the oven so that it would not be over-cooked in the final product. That seemed to really help as the chicken was perfectly moist. Other than that this dish was a big hit in my house. My husband loved it.

I have been making this for years and everyone loves it! I first found it in a very old AT&T employee recipe book. For the reviewer who said that evidently people say they like it in order to be polite--balderdash! Usually if someone does not like something, they just don't say anything. One mistake people make with this recipe is using Miracle Whip instead of real mayonaise. It just does not work! Also, the law of probability says that (the number of people who give it a good rating versus the number of people who bash it, it goes to reason that the larger number is most certainly right! I get so tired of mean, spiteful reviewers. If you don't like something, that's your right but you don't have to be down-right mean. Meanness is a character flaw so you are just exposing yourself. The meanness is even worse on Sandra Lee's recipes (hiden behind 'anonymous'.

LOVE this recipe! I alter ingredients for variation, sometimes using peas instead of green beans, or turn it mexican with black beans and green chile's and salsa added...
Paula reminds me of my Gram who taught me to cook when I was a kid, her recipes are great for us everyday cooks, no fancy ingredients, and easy on the pocket book!
