    This recipe was pretty good, although it was hard for me to eyeball 6 oz of rice so I ended up with a little extra. I compensated by adding about 1/2 cup extra mayo. We also skipped the water chesnuts. I also added extra cheese (including a layer on top- cause there's no such thing as too much cheese! I recommend slightly undercooking the chicken since as you bake it for about 20 minutes, the cooking process continues. Good stuff, I served with salad.

    Paula's Chicken and Rick Casserole was easy, it's quick to make, and my family loves it! I make it for Sunday lunch, and sometimes for "bring to's". Always get rave reviews. Recipe doesn't need tweaking or changing. Paula rocks!

    My mom came up with this recepi in the 50's and sold it to a caterer. Now I find variations everywhere. One thing I would add, use curry rice or add curry powder to taste. That was in the original recepi and I dont think its as good without it, if you like curry!

    Theres creamy, crunchy, savory, meaty and light all in one mouthful. My family loved it. This would be a good one to fix with leftover chicken. I love the mix in one bowl and pour concept. Defiantly would fix again.

    i tweaked this recipe a tad cuz no one needs 1 cup of mayo in anything, and i put in my choice of mixed vegetables. i absolutely loved my husband was very impressed

    this is going to be one of my go-to recipes from now on. I added crumbled potato chips and extra shredded cheese to the top to give it a crispy topping and add a little salt. It really kicked up the texture and flavor. Great with Broccoli instead of green beans too.
