I made this dish for my family and even my sisters, who exclusively eat junk food for meals, loved it. The great thing about this recipe is that you can modify it to your own taste. I found that it tastes even better with only 1/2 cup mayonnaise + 1/2 cup Ranch dressing or 1 cup mayo with a Ranch seasoning packet mixed in. Either way, it's so easy and so tasty.

Once again I've made an easy and fantastic meal beause of Paula...I swear by her! I used cut frozen green beans for texture (I can't stand canned. I rinsed them with hot water to thaw a little. Also, I used left over turkey instead of chicken which gave it a lot of flavor and used the cream of mushroom suggestion below. I'm keeping this recipe around to use again after Thanksgiving. It did make a lot so also as suggested below, I froze 1/2 for a later dinner. We had it was tossed green salad and all of us finished our plates!

Hello Paula,
My husband is a hard man to please in the food department. We were watching your show and saw this casserole you were making and he said "that looks good". So I went to my computer and made a copy of the recipe and made it. He loved it. I wasn't used to some of the ingredients and had to buy a lot of them. But it was worth it. Thanks, I plan to use a lot of your recipes.

I saw Paula prepare this recipe on a flight and tried it the very next evening. It was very easy to prepare and delicious. I took suggestions from other reviewers and used a deli rotisserie chicken. It produced about 1/2 to 1 cup more chicken, but I have two sons and the extra chicken was welcomed. I also used frozen french cut beans(I hate the texture of canned veggies, thawed and drained instead of canned. One note, this is a very generous recipe, more than my family of three could eat in one sitting, so I divided the casserole in two portions. I prepared half in a 1.5 quart casserole as directed and froze the other half for a future meal.

This is a great recipe. My mama makes a hard to beat chicken and rice dish but this one is completely different. I like the variety.

It was pretty good to me although I will use cream of mushroom instead next time, and maybe a little more rice. It is very fullfilling and makes too much for two people.
