I was excited to try this recipe, however, I wanted to give it my own "twist". I sauteed a bag of frozen broccoli florets w/ green onions in some olive oil, and used that instead of green beans. I used a rotisserie chicken from wal-mart (they're only $3.95 and where can you buy a whole chicken to boil yourself...this way is a ton quicker, cheaper, and frankly, way more tasty! and cut it into pieces. I also used some cheese sprinkled on the top, covered with tinfoil and baked. I only fed 4 people because they all ate 2 servings and took leftovers! It is simple, quick, and super tasty. I cant wait to make this again. Thanks Paula!!

My family has been making this great casserole for years, and it's a terrific, festive-looking meal for a crowd. I admit I have not seen Paula make this dish, so I don't know what sort of green beans she used, but we've always used the French style beans here. The thin slices incorporate well with all the other ingredients.

I made this tonight (Sunday Dinner- saw it on yesterday's show. My husband loved it! I couldn't find pimentos so I used some green olives with pimentos instead - not bad! Next time I'll save time and use a roasted chicken from the grocery store like one reviewer said previously. I also made this with the pinapple upside down biscuits from the same show- yummy dinner!

I tried this recipe tonight and my husband and I liked it very much. Wonder what it would taste like with asparagas or broccoli instead of grean beans? Maybe with French's Fried Onions on top. I cheated though - bought a roasted chicken at supermarket - worked great. Combined Paula's good cooking and the next show Semi-Homemade!!

I made this recipe last night with just a few additions. I added more cheese to the top of the casserole and baked it for 15 mins. Then I cut refrigerated buttermilk biscuits into quarters and put around the sides of the casserole and baked at 400f for an additional 10 to 12 mins. This only made an already delicious dish better.

Chicken and rice casserole is so easy to make with almost all of the ingredients already in your kitchen. The water chesnuts give it an interesting crunch. My family loved it!!
