    I used 1 can of green beans & 1 can of asparagus. Used 1/2 cup mayo & 1/2 cup fat free sour cream. Didn't have the pimentos so used 4 ounces of roasted red bell peppers. Couldn't find 6oz. box of rice so used a 4 oz. & added a 6.8 oz. box of chicken rice & cooked them together, thinking that I would add what I wanted at the appropriate time. Next time I'll use the 4 oz. box it was sufficient. After it was done, I crushed an end-of-the-bag nacho chips & sprinkled over the top. Great! Not runny & I never added curry! I baked it in a 9X13 dish and next time I'll put it into two smaller pans and freeze one for later. I love this recipe because it is one that you can make or replace items with your families favorites. With the garden coming on, I look forward to using fresh green vegetables in it. Oh, I didn't have cream of celery soup and so I used cream of asparagus soup instead. DRAIN all the canned stuff very well or it will be runny! I will keep this recipe! Thanks Paula!

    My family loves this dish. Even my four year old! I substitute frozen peas for the green beans and omit the water chestnuts. This has great flavor and is even better the next day!

    YUM, YUM, YUM...DELICIOUS! I coudn't stop eating it! And my boyfriend went for seconds, and thirds!!! I even e-mailed this recipe to about 15 of my friends. It's super easy to make. Very affordable, and guaranteed to please everyone! Paula, you rock!

    This was absolutely amazing - - we all loved it, even my picky eaters! I did tinker with it a little bit - - used peas instead of green beans because that's what my guys like. Used andouille sausage. After enjoying it immensely, we agreed shrimp would be a great addition with a little Old Bay seasoning.

    Love this!! Such a great comfort food!! We do however leave the pimentos out and add 2 cloves of garlic.
