this recipe is absolutely delicious. However, I do prefer fried chicken! I did try it though and it is easy, fairly fast to put together and my family loved it. I did omit the pimientos! It was still delicious though!

Pass on this one. Normally all the recipes I make of Paula's turn out and are VERY good. This was edible and that's about it. I won't make it again.

Delicious! I make this every year for my family at thanksgiving (and they are a tough crowd and they love it. I just leave the chicken out, substitute for cream of mushrooms and it's fantastic. Give it a try! you'll love it too!

Easy to fix. I used a rice cooker and tripled the rice quantity. Upped other ingredients according to taste while mincing the chicken so as to be not-so-noticeable.

This needs quite a bit of adjustment before I can give this a higher rating. I didn't think the water chestnuts added anything to this dish but a weird texture unexpected in a casserole. And I like water chestnuts. But they belong where you see them most, in Asian cooking. Secondly, this dish needed a...flavor. I tasted the mixture before baking it and decided it tasted reminiscently like Thanksgiving. So I added sage and Craisins dried cranberries. Cest manifique. The only thing I'd do next time is either to sprinkle bread crumbs on top OR add a later of previously unbaked stuffing on top. Overall it wasn't too disappointing, but you need to work with it.

I loved it - I added mushrooms, and a can of diced jalapenos (because spicy makes everything better and used non-fat mayo and it was still very tasty - we didn't have leftovers!

--Why not try the SOY milk product section.
If that is not do-able, then try a different direction.
--Make your own mayonnaise (to avoid any powdered milk additives...which is just eggs and oil with salt & maybe pepper and for tang try a splash of lemon or lime juice. (I am sure there is a homemade mayonnaise recipe you can locate.
--Instead of canned milk based soup, try jar or canned tomatillo sauce with a Mexican box rice & corn & maybe some type of canned bean.
--Make your own Cream of Chicken or Cream of Mushroom only make it with ground up mushrooms in a thickened Soy Milk & cornstarch mixture. Use chicken boullion & some of chicken minced in to the same Soy Milk & cornstarch mixture.
    --OR USE YOUR IMAGINATION
    Good luck & happy cooking!
