Ingredients
- 2 tablespoons butter or vegetable oil
- 1 medium onion, peeled and diced
- 3 cups diced, cooked chicken
- 2 (14 1/2-ounce) cans green beans, drained and rinsed
- 1 (8-ounce) can water chestnuts, drained and chopped
- 1 (4-ounce) jar pimentos
- 1 (10 3/4-ounce) can condensed cream of celery soup
- 1 cup mayonnaise
- 1 (6-ounce) box long-grain wild rice, cooked according to package directions
- 1 cup grated sharp Cheddar
- Pinch salt
Directions
Preheat oven to 350 degrees F.
Heat butter or oil in a small skillet over medium heat. Add onion and saute until translucent, about 5 minutes. Remove from heat and transfer to a large bowl.
Add all remaining ingredients to bowl and mix together until thoroughly combined.
Pour into a greased 3-quart casserole dish. Bake for 20 to 25 minutes or until bubbly. Let stand for a few minutes before serving.

I love Paula's cookin' but this is bland city; try fresh beans and add a little soy sauce and thai pepper sauce to take this dish East and put some jewelry on this pig.

Just love this casserole! The mayo adds a bit of tang and extra flavor. I have also made it with frozen chopped broccoli instead of the green beans and it's just as good! Some reviews said they left out the water chestnuts, but I can't imagine it without that wonderful crunch. I've also at times added sliced mushrooms. This has become one of our favorites! Thank you for sharing, Paula - you are the queen of good taste. (I have used the low fat mayo and it works fine.

Wonderful blend of flavors. I added some ground pepper and sea salt to decrease sodium. I did not have the water chestnuts but if I have them next time it would have made a good crunch. I crushed some saltines on top individual portions and added a litt extra cheese.
It was a sinch to make and I am greatful to Paula for sharing her recipes with all of us. Being a mom and even a busy mom and having picky kids that you can sneak stuff in is great. Thank you.
