Ingredients

  • 2 tablespoons butter or vegetable oil
  • 1 medium onion, peeled and diced
  • 3 cups diced, cooked chicken
  • 2 (14 1/2-ounce) cans green beans, drained and rinsed
  • 1 (8-ounce) can water chestnuts, drained and chopped
  • 1 (4-ounce) jar pimentos
  • 1 (10 3/4-ounce) can condensed cream of celery soup
  • 1 cup mayonnaise
  • 1 (6-ounce) box long-grain wild rice, cooked according to package directions
  • 1 cup grated sharp Cheddar
  • Pinch salt

Directions

Preheat oven to 350 degrees F.

Heat butter or oil in a small skillet over medium heat. Add onion and saute until translucent, about 5 minutes. Remove from heat and transfer to a large bowl.

Add all remaining ingredients to bowl and mix together until thoroughly combined.

Pour into a greased 3-quart casserole dish. Bake for 20 to 25 minutes or until bubbly. Let stand for a few minutes before serving.

    Very good. Easy to make. Adding crushed crutons or onion straws on top makes it even better.

    Delicious, but not for your whole dinner

    I was feeling a bit under the weather yesterday and decided that some of Paula's home cooking would be great for dinner. I... put the long grain and wild rice on the stove to cook (25 min.) while I took two bone-in split chicken breasts and popped them in the electric pressure cooker with some broth, seasoning salt and fresh ground pepper (8 min.). I sauteed the onion in butter as the chicken and the rice cooked, then removed the chicken to cool. As the chicken cooled, the rice finished cooking and I combined all of the other ingredients with minor tweaks: 3/4 c. of mayo instead of a whole cup, 98% Fat Free Cream of Celery and I subbed two small cans of sliced mushrooms for the waterchestnuts and pimento since I don't care for their flavor and/or texture. I cubed up the chicken and added it to the mix. I divided the casserole between one 8x8 square pan for my boyfriend and I and one small oval stoneware pan (to give to my parents), cooking both individually for 25 minutes each. The casserole was delicious, very creamy and with wonderful flavor, but I could only eat a small bit as it was so rich. This would be a great addition to a buffet table or to take to a potluck, but to eat just this for dinner would be a bit much, even if you served it with other veggies or a salad. I will definitely make this again though, it was really good comfort food at its best.Read more

    I make this casserole when I have relatives from out of town or when I want to make to someone sick or with a new baby. Very... very good. I agree that the mayo can me a little much but just cut back a little. Great flavors and very filling.Read more

    I thought the casserole was great and easy! I seasoned the chicken (like I would any chicken I'm preparing), so it was... flavorful. The only thing I would change is to cut down on the mayo, but it could be that I did not mix it well enough.Read more
