Ingredients

  • 2 tablespoons butter or vegetable oil
  • 1 medium onion, peeled and diced
  • 3 cups diced, cooked chicken
  • 2 (14 1/2-ounce) cans green beans, drained and rinsed
  • 1 (8-ounce) can water chestnuts, drained and chopped
  • 1 (4-ounce) jar pimentos
  • 1 (10 3/4-ounce) can condensed cream of celery soup
  • 1 cup mayonnaise
  • 1 (6-ounce) box long-grain wild rice, cooked according to package directions
  • 1 cup grated sharp Cheddar
  • Pinch salt

Directions

Preheat oven to 350 degrees F.

Heat butter or oil in a small skillet over medium heat. Add onion and saute until translucent, about 5 minutes. Remove from heat and transfer to a large bowl.

Add all remaining ingredients to bowl and mix together until thoroughly combined.

Pour into a greased 3-quart casserole dish. Bake for 20 to 25 minutes or until bubbly. Let stand for a few minutes before serving.

    EXCELLENT recipe, I think what really makes it yummy is the mayo and cheese.. Healthy it isn't, but delicious it is.. I add... corn and broccoli sometimes too for the added veggies for my 2.5 year old. She really like this recipe too so that's a plus :) I've made it 3 times now in the last month and a half!Read more

    I have made this dish several times for my family with many different tweaks to it every time I make it. You can really make... the recipe your own by using either cream of mushroom soup or cream of chicken soup and you really can throw anything you have in your pantry or fridge into this casserole and it comes out great! A super short cut is to buy a rotisserie chicken at the grocery store and cut it up and throw it in! It's one less step and for a busy Mom like me! I also used Minute brown rice since it's healthier and cooks up quick! One last thing is to use only 1/2 cup of mayo and sub the other 1/2 cup w/ low fat sour cream. DELISH! Even the kids love it!     I altered the recipe quite a bit. Used the chicken and rice, cream of chicken soup, reduced fat sour cream instead of... mayonnaise, and a bag of fresh spinach instead of green beans (chopped it up), topped it with chopped pecans, paprika, salt and pepper.     Does anyone have a suggestion for replacing the mayo? I was thinking about another can of cream soup, but not sure it will... work. I suppose I can try and tell everyone if it works. I appreciate the help!Read more
