My husband and I usually love everything that comes out of Paula kitchen, this however is not one of them. We both agreed that the mayo taste was just a little too much. We probably won't eat this ever again.

I made this tonight for dinner and even my seven year old asked for more!! Great way to get her to eat her veggies! I did make a little change.. I took the rest of the cheese package and added to the top of the casserole once I got it in the pan. Next time I think I will cut down on the mayo or do the half and half...but we liked it in our house.. Another good one Paula!!

My boyfriend and I tried this casserole with cream of broccoli soup instead and a can of mixed veggies instead of green beans and it was excellent. Lasted the two of us for a week!!

I changed it up a bit because of the kids, instead of chestnuts I put in corn and I did not put in the pementos. I also used a can of cream of mushroom soup because thats what I had and it worked out great. The kids loved it.

Overall this is a good basic recipe to have. Especially if you are trying to use up extra turkey or chicken.

I made Paula's Chicken and Rice Casserole this evening for my family. I used light sour cream instead of mayo and it was delicious. My family really enjoyed the casserole and it was easy to make.

I will definitely keep this recipe and make it again.

This is one of those dishes that tastes much better than it looks. If you have picky eaters you may have a problem as the casserole dosen't look very tasty coming out of the oven.
I think I would take the advice of some of the other posters and use sour cream next time instead of the mayo.

Great taste, I added a little garlic and left out the pimentoes (did not have any. Could have made a double batch.
