These empanadas are DELICIOUS! I made them after seeing Paula's show, and my husband and I were amazed at how easy and YUMMY they were! I'm making them tonight for a potluck at work tomorrow! I'm sure they'll be a hit!

They were pretty easy to make. It took a little time to put it all together, maybe 45 minutes total, but well worth it! They had a lot of flavor and were delicious! Everyone loved them and asked me to bring them to a party this weekend. I ended up with quite a bit left over, but you can freeze it. Great recipe! :

This was a great idea!! I changed it quite a bit adding taco seasoning, salsa, and corn. I rolled out the dough so that is was a little thinner and like most of you had a lot of extra filling. I had one left over pie crust so I lined a small pie dish with the crust and filled it with the extra filling making a pie type dish!! Oh so yummy!!!

I used another 1/2 of a jalapeno and added 1/4 cup of minced (almost to a mush onions. This recipe is very easy to put together but a little more time consuming than I thought it would be. However, it is well worth it! I served the empanadas with some salsa over the top, and some Spanish Rice as a side! My family loved them! This recipe is a keeper and I look forward to making the empanadas again very soon! Thanks, Paula!

I think the recipe is a great idea and is better when more spices and veggies are added, and when served with salsa, as suggested here. Has anyone substituted another cheese (goat cheese, maybe? for the cream cheese?

pretty good' i think the pie crust overrides the flavor of the ingredients. and i think it would be better if you dipped it into a good spicy salsa

Wow! Wasn't sure how the pie crust would work out, but man was it good. I always try to make Paula's recipies a little more healthy, so I used fat free cream cheese and boneless skinless chicken breasts (grilled with mesquite seasoning. Great served with salsa and sour cream!

I made these last night for dinner and the whole family raved about them! If you like Southwest eggrolls you will love these! They were pretty easy and SO delicious! I'm eating the leftovers for lunch today!
