I made the empanadas as per the recipe. They are tasty, although I would cut some of the salt and add another half of a jalapeno pepper. The one thing that I didn't understand, per the directions it seems like all you need are the two pie crusts, but there was soooooooo much filling left over, I could have literally made at least 40-45 empanadas, when this recipe crust wise made 18.

Very good. I'm not a big fan of peppers so I substituted onions and it was still good. Will make again.

These appetizers were good but I tasted a little too much pie crust. I, too, had leftover filling so I made a second attempt with Pillsbury refrigerated biscuits. I flattened the biscuits a bit with a rolling pin to get a larger circle, folded half of the biscuit over the filling, sealed and baked according to package directions. They looked just like Paula's and were very good. Much less crust!!

This is yet again another great recipe of Paula's I'm adding to my collection. I fixed these after seeing them on today's show. They were so easy (I cheated and used canned chicken and are wonderfully tasty. They're super hors douvres that look like I spent hours working on them. I can't wait to serve these at my next party--my guests will be so impressed!!

This recipe was in one of the early issues of Paula's magazine. They were very easy to fix and yummy!
