Chicken Nuggets with Honey Mustard Dipping Sauce

Ingredients
  • 2 cups crushed sour-cream-and-onion-flavored potato chips
  • 1 egg
  • 2 tablespoons milk
  • 6 chicken breast fillets, cut into 1 1/2-inch cubes
  • 1/3 cup butter, melted
  • Honey Mustard, recipe follows
Directions

Preheat the oven to 350 degrees.

Spread the crushed potato chips in a shallow dish. Beat together the egg and milk in a shallow bowl. Dip the chicken cubes into the egg mixture and then dredge them in the chips. Place the chicken nuggets on a baking sheet and drizzle with melted butter. Bake for 15 to 18 minutes, or until golden brown. The chicken nuggets can be frozen after baking. Serve with your favorite sauce, such as honey mustard or ranch dressing.

Honey Mustard:

3/4 cup mayonnaise

3 tablespoons honey

2 tablespoons yellow mustard

1 tablespoon lemon juice or juice from 1/2 lemon

Horseradish, to taste

2 tablespoons orange juice (more or less as needed)

Combine all ingredients except orange juice; stir well. Thin to pouring consistency for dressing or dipping consistency for dips with orange juice. Cover and chill for 2 or 3 hours.

Yield: 1 1/4 cups

I just made this right now and they are the best nuggets I have ever had. They are very tender inside and crunchy outside. I used a large baking pan instead of a baking sheet and used a lot less butter. Next time I will use even less. You don't have to cover every bit of chicken with the butter, when it melts it spreads out. I would give the chicken by itself four stars. It was delicous right out of the oven and for about an hour afterwards. Leftovers are out of the question because the crust becomes very soggy. I used Original Baked Lays potato chips because Publix and Walmart do not stock Baked Lays Sour Cream. I will definitely use regular Sour cream for guests. I used only enough melted butter as needed, baked 15 minutes at 350. They were tender, moist, and delicious. I baked the 1 1/2 " pieces then cut to bite sized. I crushed the potato chips really well, otherwise they would not have stuck to the nuggets. I microwaved a small portion of the baked nuggets that had cooled and they came out perfectly so now I know that I can make them ahead and microwave small amounts as needed. Bobby's dipping sauce is superb! I used 2 tsp. horseradish and it was mild, even for kids . Also, tI used 1 tsp. lemon juice otherwise I think more would have made the sauce too thin. I only tried this recipe for the honey mustard sauce, and it's really good, but it tastes to much like regular mustard. I made a few revisions of my own. I substituted 1 tbsp of Classic Yellow mustard with dijon mustard. I added 1 1/2 tbsp of honey extra, and 1/2 tsp of extra lemon juice. I love this recipe. First tried it when my grandpa was watching the show and printed the recipe for it. I have tried it with both sour cream and onion chips and barbeque chips. Both were wonderful, however; i have noticed that some brands of potato chip do not work as well as others. Some brands add too much salt where others are too greasy. If the first batch does not work for you, try a different brand of chip or even a different flavor. My father-in-law does not like sour cream and onion so we tried barbeque and now every time I make them I make half of each. EXCELLENT! I have also used regular potato chips and added dried parsley flakes and onion powder to the crumbs. I did not drizzle the nuggets with butter either ; but sprayed them with Pam before baking. I put them on a cooling rack which was on a baking sheet;that way both sides get crispy! I made this for the kids for Christmas dinner and not only did they LOVE it, the adults did too. I made about 3 large filets for about 5 kids but they were gone in minutes (they were that great. Next time I will make more since I can freeze them for later. I ended up crushing the chips with my bear hands even smaller so that it would cover more of the chicken and it worked just as great. After reading reviews, I made a few changes. After cutting chicken in pieces, I seasoned with celery and onion salt, garlic powder and pepper mixed, and let them sit in fridge for an hour until ready to cook them. This is the ultimate CROWD PLEASER for KIDs and adults!!! I devoured it. Well, me and my nephew did. I didn't have potato chips so I used crushed corn flakes. I'm going to make it next time with potato chips. I loved the honey mustard sauce. Seriously, these were 'eyes rolling into the back of the head' good!! It's also one of those dishes that you can make when you are hungry but don't really feel like cooking but want something a little more than a bowl of cereal is perfect to make. i personally didn't get to taste them due to diet. However, my husband and four kids did. The kids enjoyed helping me make them and they all liked it. Made the recipe exactly as stated except I had no horseradish in the fridge and I had purchased boneless, skinless thighs. They were amazing. I've made this recipe multiple times and really like it! (I've made the honey mustard countless times... my go-to honey mustard recipe. Most of the time, I leave out the OJ, only because I don't have any, and it's still wonderful!) With one pound of chicken, my husband, 8-year old stepdaughter, and I can devour the entire recipe. We don't taste the sour cream and onion taste, but I think that's the point. Those chips just give a tasty, not-too-unhealthy breading to the chicken. The only reason I didn't give it a 5-star rating is the fact that they aren't too fabulous reheated the next day as leftovers, so eat up the same night you make them! I have never had chicken nuggets breaded with crushed sour cream and onion chips before I found this recipe. They were super easy to make and looked beautiful, but I couldn't really taste the breading (I used Lays chips)? I was expecting it to have at least a hint of the sour cream and onion flavor. Most of the flavor came from the sauce I used with them. They were still tasty though, and this is a keeper of a recipe. I followed the recipe as described, except with much less butter and I broiled the nuggets for the last ~1min to give them a little color and crunch. To complete the meal, I toasted some english muffins and steamed some frozen spinach. Put nuggets/spinach on a muffin piece, drizzled with the honey mustard...ABSOLUTELY delicious, and so so easy to prepare a fairly complete meal that is not particularly unhealthy. Suggestions: 1. Pour melted butter into chip mixture to help them stick to chips. 2. I am not a sour n cream chip kinda of guy. When I first read the recipe I was hesitant but I made it for my children who eat store bought nuggest all the time. The first time I made these I followed the recipe to a T. We thought they were amazing!!!! The second time I made them, it was late and I was out of milk and did not want to run to the store. Oh so simple but oh soooooooooooooooo good. I used cheddar and sour cream chips and added granulated garlic and fresh gound pepper to the egg. Also used parchment paper on the baking sheet so it doesn't stick. They did take longer to cook than 15 mins but well worth the wait.I only made 3 chicken breasts and that made plenty of nuggets. Don't even think about freezing any, as their will not be any leftovers-TRUST ME. Don't forget to also make the dipping sauce. I also used it on my fresh salad.
