Ingredients

  • 1-pound loaf French or Italian bread, cut into cubes (about 15 cups)
  • 3 cups milk
  • 1/4 cup heavy cream
  • 1/2 cup coffee-flavored liqueur
  • 1 cup granulated sugar
  • 1 cup packed light brown sugar
  • 1/4 cup cocoa powder
  • 1 tablespoon vanilla extract
  • 2 teaspoons pure almond extract
  • 1 1/2 teaspoons ground cinnamon
  • 6 large eggs, lightly beaten
  • 8 ounces semisweet chocolate chips

Directions

Preheat the oven to 325 degrees F.

Lightly grease a 13 by 9-inch baking dish. Place the bread in the baking dish.

In a large bowl, whisk together the milk, cream, and liqueur.

In another bowl, combine the granulated and brown sugars with the cocoa powder and mix well. Add this to the milk mixture and whisk to combine.

Add the vanilla and almond extracts and the cinnamon to the beaten eggs. Combine the egg mixture with the milk mixture and mix well. Stir in chocolate chips. Pour the mixture evenly over the bread cubes; let stand, stirring occasionally, for at least 20 minutes, or until the bread has absorbed most of the milk mixture. Bake the pudding for 1 hour, or until set; a knife inserted into the center of the pudding should come out clean. Serving the pudding warm, or refrigerate it and serve chilled.

Serve it warm or cold, with whipped cream or a dessert sauce.

    I used stale english muffin bread and substituted icecream for cream, as I did not have any cream. Used a glass cooking dish... and cooked for 70 minutes. No other changes. I was afraid of all the almond, as I am not a big fan, but it totally worked! The top came out nice and crispy, the buttom nice and gooey. Everyone just loved it. I served it warm over vanilla bean ice cream. A BIG hit and will be making this again, noting my changes. I think when bread puddings do not turn out - people are not using the correct bread, and should try it using a heavy type bread, as heavy breads do not get mushy.Read more

    If you love bread pudding and you love chocolate, this one's for you! I've made this several times and it is a favorite... wherever I take it. I did use only 1 tsp. of almond extract because it is so strong (but great flavor) and added a little extra vanilla. I also do not like coffee (we're tea drinkers) so instead of coffee liqueur I added a little hershey's chocolate syrup. I've always loved old fashioned bread pudding, but this is better!     If you like bread pudding and you like chocolate, you'll love this! I didn't try using the almond extract because everyone... else scared me away from it and I didn't have any anyway, but this is delicious. It's even better with the cream sauce which my wife thought was great, but I just eat it plain straight out of the fridge. Great as is! Try this for either a dinner party or for a dessert that you can munch on for days because it makes a lot. Easy to make too.Read more

    Love bread puddings and love chocolate. Even love the white chocolate bread pudding at Commander's Palace in New... Orleans. This was just an awful mess; threw it out after trying it. Way too much bread for the other amounts (and I didn't even put in as much as was called for). There was no pudding in this bread pudding.Read more

    The bread pudding was sooooo good! I listened to the other reviews and used only 1 tsp. of almond extract, plus that is all... we had left. The coffee liquor really brings out the taste! I love the texture with the chocolate chips on top, gives a nice crunch with the soft mushy pudding.Read more

    Paula, this was wonderful! My husbands loves this and asks for it often. In fact, we are going to a brunch this morning and... he said "pleeease", so I better get started. I did add some chopped pecan pieces to the top before cooking and the consensus was that is the way to go. The cream sauce is also a must! Thanks again Paula for sharing this unique version of bread pudding that will stay in our family and that we can share with friends. Read more
