I made these for a house warming party where everything was hor dourves that required no utensils. So, I made these in mini-muffin tins. Couldn't find chocolate Cool Whip, but used regular Cool Whip, Starbucks via and a little cocoa powder and powdered sugar for the filling. Piped the filling in until it was just at the top, then froze them in large ziploc bags. Day of the party, took them out and piped just enough frosting on the top to cover the filling hole. The frosting is extremely rich and sweet, so a little goes a long way. Using a star tip with a pastry bag made it easy to put just a small amount and made them look great too. They were perfectly decadent little bite sized morsels.

Great flavor combination, this is a melt in your mouth recipe, just needed more chocolate in my opinion. I agree with other reviews about the frosting, I doubled the batch & added an extra 1C. sugar & 1T. cocoa. I found the coffee liquor made the cream filling a tad bitter. I whipped up white cream & added 2T pwd sugar & 1T cocoa. It's offset nicely by the frosting, and you can't beat the flavor in the cupcake. I might try rum next time....

This Cupcake was so delicious. Very moist and tasty. Just add a tbsp of sugar for the frosting and I don't have available coffee flavored liqueur so I mixed some instant coffee with brandy and it turned out good. My family loved, loved it.

My Daughter is getting married so we have been making LOTS of cupcakes to test the flavors. This one won't make the wedding due to needing to be refrigerated but it will be a staple for our other celebrations. I used a non-alcoholic flavoring instead of the liqueur and they turned out great! However, the frosting needs way more suger to make it stiffer.

I am very dissapointed in this recipe. I love Paula, but this was aweful. I pretty much had to change everything around and make up my own. The frosting is way too runny, the filling just makes the cupcakes soggy. And if you read everyone else's review's, you can see that they all changed and added things themselves. Sorry, Paula... I still love you!

Excellent cupcakes, flavorful and very moist. I made these for my friend's bday party. All my girlfriends loved them!! One of my girlfriends said these were the best cupcakes I ever made. Another friend who doesnt like chocolate said they were SOOO yummy. On another note, kids might not like these since they have a coffee flavor. I did make few changes: A* put less sugar (1 and 1/4 cup of sugar instead of 2in the batter. B* I only did 1/2 of filling C* put less sugar in the buttercream (instead of 3 cups I only put 1 and 1/2.
