    This is definitely my go-to recipe for chocolate cupcakes! I changed the filling a little bit (I didn't like the flavor of chocolate cool whip so I added melted chocolate with regular cool whip and cream cheese. I made an espresso butter cream frosting using a stick of butter, 1 box of powdered sugar, about a tablespoon of instant espresso powder and a few tablespoons of whole milk. It came out just perfect with the chocolate cupcakes!

    I made these cupcakes for my daughter's baby dedication. I have been looking for a delicious from scratch chocolate cake recipe and this one was perfect. They were easy to prepare with ingredients that are normally found in my pantry. They baked up perfectly. The cake was moist and flavorful with a delicious chocolate taste. I made two batches - one with the coffee filling and another that was plain. The coffee filling ones were topped with a chocolate frosting (rather than the coffee buttercream and were oh, so decadant. The plain were topped with a pink tinted vanilla buttercream. Everyone raved about these cupcakes and I certainly agree. My only comment is that they took a lot longer to prepare than expected due to the need to mix the batter, bake, cool, fill, and then frost. Lots of steps so prepare to spend some time in the kitchen. However, the end result was totally worth the effort! Highly recommended!

    I made this cupcake last Saturday and they turned out great…so moist and yummy. Instead of using strong brewed coffee, I used 1 cup of warm milk and add 1 Tbsp. of instant coffee. I did the same for the coffee buttercream frosting using ¼ cup of warm milk and 1 teaspoon of instant coffee. Everyone loved them. I will make this cupcake again very soon! Love them

    for people who dont like coffee just use water in cupcakes and frosting use 1/2 and 1/2 or cream instead of coffee and cream filling use chocolate liqeur

    Hi All - I'm just looking for a good chocolate cupcake recipe! I want to modify it by eliminating the coffee and maybe substitute some buttermilk. Don't need filling or frosting. I'm a big fan of Paula's baking so was hoping I could just turn it into a plain chocolate cupcake (c: any one else experiment with it?

    Amazing!! this cupcake came out light and airy and the recipe was easy to follow. the coffee flavor was not as strong as I would have liked it to be so next time I will use even stronger coffee. for the filling I could not find chocolate whipped topping so I used regular and added about a tablespoon (maybe a little more cocoa powder to it. I also added a spoon of khalua in the frosting. Awesome! I will hold on to this recipe forever

    I just wanted an excellent chocolate cupcake (didn't use the filling or frosting recipes and this was it! I'd made several attempts with other recipes and found them to be so bland. I subsituted milk for the coffee, as my filling and frosting are mocha, and they came out fabulous. Don't know why I didn't go to Paula first. Never a disappointing recipe! These bake up nicely as minis, too.

    These really sounded delicious so I had to try them! I couldn't send Kahlua filled cupcakes into work with my husband so I had to substitute it with chocolate syrup. I also can't find the chocolate flavored cool whip in my stores so I used regular.

    I thought the chocolate cupcake could be a little more chocolatey, the filling tasted good, and the icing is absolutely amazing. Even if the cupcakes were a bomb (which they're not the icing would make up for it! I will probably end up using this icing for other flavored cupcakes since it is so good. I am sending them in to work tomorrow so we will see the reaction then!
