I too found them to be some what gritty. The cinnamon is way too over powering. I would recommend cutting it in half. Next time I will find a true Italian recipe for canolis.

Is something wrong with my computer?!? I cant seem to see any of the recipes it only has the picture and the box with stars prep time and difficulty! please help me i want to cook delicious treats!!!!!!!

These were delicious, but the recipe is missing a couple of things. First, it doesn't say how MUCH melted chocolate - I made way too much. Second, the picture has the pistacios on the outside, but the recipe has them on the inside. I substituted peanuts due to nut allergies in the house and put them both on the inside and outside, though the outside was hard to do. Also, I would say all you need is 1/2 package of melted dark chocolate chips. I used almost a package and threw alot away, even though I also drizzled chocolate over the top

Love Paula's personality and her southern expertise, but southern ITALY this is not! The Italian fella she had on the show w/her didn't even know how to make cannoli, he was learning from Paula--that should tell you something. For grits and pulled pork and fried chicken, Paula's your gal, but for cannoli, look elsewhere. Mix the ricotta w/confectioner's sugar, drain ricotta if needed beforehand. Add mini choc chips, a touch of orange flower water (available in Italian stores, and it's that simple and authentic. Dip the shell into chocolate BEFORE filling it, not after! Your cannoli is simple to make, no need for whipped cream if you mix the ricotta and sugar, it will be smoother that way.

Awesome! Used 1 teaspoon of almond extract in place of amaretto. Dipped the ends of the shells in chocolate then in chopped pistachios. Taste and presentation were great!

This is my favorite cannoli recipe! I have found this recipe doesn't work well if you just by ricotta from the general grocery store. But, if you get some really good quality ricotta, it's wonderful!

First of all you cannot mix in any other ingredients with the whipping cream and expect it to form soft peaks! The flavor of the filling is not completely awful but the texture is! It's not smooth as cannoli filling should be, it's got little lumps in it from the ricotta cheese- ew! This is an expensive waste of time. This is not a good recipe for traditional cannoli.

i was meeting my boyfriends father for the first time .. and i made dinner and dessert for him he grew up with italians nd cicilians and he love them .. i didnt use pistcios tho and i added more cinn and sugar . they were a GREAT hit i just might use more chocolate next time .like put chocolate chips in them. you can get the shells at publix they were a great succese his dad even asked for the recipee ... i love them will be makin them again!!!!!!!!!!!!! Wade a go paula ..
