I had trouble with the frosting. My boyfriend and I thought it was gritty from the granulated sugar. Should I have used powdered sugar? We also thought it was too thin. (I did beat it for an extra 3 minutes and it was not raining or humid. When I assembled the cake layers, I had to keep pushing at the layers to stay straight. But overall, we thought the flavors were awesome. I wish I had read the reviews before I baked this cake. I think it could have been better if it was beaten over the double boiler for a few more minutes.

I had to laugh when she started making the icing. My mother made this icing all the time and we all hated it. The first thing my father and 2 sisters did was scrape it off and just eat the cake.

I made this for my family earlier this week, and they loved it! I like coconut but have decided it's not for me on cake. This recipe did give me an idea for a lemon cake though. My husband and daughters raved at how delicious this cake was. Thank you Paula for a great cake recipe!

Made this cake for my husbands birthday and it came out perfect. It was really easy to make and the lemon curd was really good with the coconut. I thought it might be too much but it wasn't. LOVE IT. Thanks Paula.

Make this cake!
"Exquisite" is what my husband pronounced it. I made it for Father's Day... I baked it in 3 layer pans ~ neater than cut surfaces. And I made my own fresh lemon curd...the store bought stuff has a fakey taste to me. The frosting turned out perfect..it's a pretty impressive looking dessert, too. Absolutely wonderful & tempting.

I knew this would be fantastic. I made this cake last night, all four layers. The icing I had to do over once but it turned out great. Easy and very tasty.

The frosting was delish! I only used 1 cup of sugar. Thought 1-1/2 cups was too much for my liking. I was lazy and only had 2 layers instead of 4. Next time I make this I will definately use the 4 layers because I was unable to taste the lemon filling. Great and easy. Will definately make it again,

I just watched Paula make this cake with her hubby Michael. During the show Paula specifically stated the "ICING WILL NOT WORK IF IT'S RAINING OR THERE IS HEAVY HUMIDITY OUTSIDE". I felt it was important to add this comment for anyone who may be interested in making this cake but did not actually watch the show. So to avoid any definite unsuccessful attempts, don't even try making this cake in those conditions. I know I would appreciate this heads up, had I not watched the show. Hope this helps someone. :

This is a fantastic cake and it doesn't get any easier!! It's a crowd pleaser and you can make when your in a pinch. I made this for Easter and I will definitely make it again. LOVE!!!

Made this for Easter dinner. Delicious x10!! I think the people that trouble with the icing dinot use a heavy, professional mixer. It did require the full ten min. on high speed. The lemon curd made it flavorable even more. Will make again....not time consuming with a cake mix, and looked very home-made.
