This recipe was very delcious for out family. I didn't use the rum in the marmalade though because I'm only 13 myself and I was the one cooking the dinner.

I take this to a friends house for New Years Eve party and everybody loved it it was so easy to make and it was great everybody at the party asked for the recipe

This is truly a delicious dish. I fixed it for a Football party, and they were gone as fast as I could set them down!!
I had two pounds of shrimp, and four people, and GONE!!!!!!!!!!!! was the coconut shrimp!!!!!

Paula's version of Coconut Shrimp is wonderful. I've always ordered Coconut Shrimp with Pina Colada Sauce at my favorite sea food place and I'm very pleased that I now have a recipe that is as good (if not better, and is easy to recreate. I always had trouble keeping the coconut on and keeping the flavor from being to bland.
This recipe is flavorful and the shrimp stay tender and succulant. It is also time friendly and gives you time to enjoy it with your friends and family.
I love the marmalade sauce although I do use a low-sugar variety as I am diabetic.

For a spicy twist to counteract the richness is to mix a spoonful (or to taste - so a big one for me of HORSERADISH into the marlmalade. Hey why not - maybe next time the rum too with the horseradish. Some restaurants use the mixture as a dipping sauce and works great with these babies. Really makes the shrimp pop!
