    I love this recipe! I'm a huge collard greens fan and this is by far the best I've had and it's simple. The first time I tried this recipe, I used the ham hocks and I thought that they were great. The next time I used this recipe I used the smoked turkey wings so they a friend of mine that doesn't eat pork could try them and I loved them even more! The smoked turkey wings give the greens a much better flavor then the pork. I highly recommend this recipe using the smoked turkey wings.

    I had never made nor eaten collard greens before...northern cook, you know. I don't know if it was supposed to be so salty or not. Without all the salt, seasoned to my liking, this would have been a definite five plus. Will definitely make again.

    I have never made collard greens before and am deffinately not afraid to try a new recipe. My husband came home with a big bag of greens one day, and so what did I do? Of course I went on-line to find a recipe. Paula's recipes are always great, and I usually have everything I need to make them at home. This one was a real winner!

    My mother, who has been eating collards for 80+ years, raved about this recipe. When searching for new recipes I always look for Paula's first.

    One tip - make sure you wash your cut up collards a few times in water mixed with some baking soda to remove a litle of the bitterness. Also, I add some cider vinegar to the greens, and don't bother with the butter - ham hocks add enough fat!
