After trying for years to cook a proper pot of greens and failing it was Ms. Paula Deen who finally taught me how to do it. The key is the imporatant step of seasoning and cooking your water before ever adding the greens. I love this recipe and have just registered with food network just so that I could give a five star rating to this wonderful recipe. If you live in the south and cannot cook greens well then there is just something wrong with you. Thank you Paula : for saving me and my previously tasteless greens...

I'm not much of a chef, but decided to try out my skills again. The dish wash EXCELLENT! My husband absolutely loved it! He was so proud of me and I was extremely proud of myself. I will be cooking this again for the holidys!

These are really great, but definitely too salty. No, I did not add a cup of salt, but I think in the future I will omit the regular salt called for and just use seasoned salt. Definitely great flavor, though, and I will be making them again soon!

Wonderful! These are my Grandmother's collard greens that I knew from years ago; an NC lady who cooked with no "recipes". The salt is too much and a tablespoon of either house or seasoned salt would be enough, along with the suggestion someone else gave, of tasting the water before you put the greens in and go from there if you need to. Love it!!!

OH MY GREAT GOODNESS These are by far the BEST collards I have ever had! I did add some sugar to it. I liked Both Gina's and Paula so I combined the two OUTRAGEOUSLY DELICIOUS!

ALWAYS taste the water before you put in your greens cuz you can dump some n add more if it is too salty. And, only a tsp. of house seasoning goes into the pot. Not a cup of salt-which is used to MAKE the house seasoning-and stored separately for use whenever!!!!
