Ingredients
  • 2 cups cooked corn, fresh or frozen
  • 1 avocado, cut into 1/2-inch cubes
  • 1 pint cherry tomatoes, halved
  • 1/2 cup finely diced red onion
  • Dressing:
  • 2 tablespoons olive oil
  • 1/2 teaspoon grated lime zest
  • 1 tablespoon fresh lime juice
  • 1/4 cup chopped cilantro
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
Directions

Combine the corn, avocado, tomatoes and onion in a large glass bowl. Mix together the dressing ingredients in another bowl, pour over the salad, and gently toss to mix.

I like this recipe but found it a bit bland so I kicked it up with zest and juice of one whole lime, a little rice vinegar, more cilantro, and a wee more salt. Also prefer a lighter oil as IMO olive oil is a bit heavy for this kind of light salad. Yum! Great flavor combos. I replaced the cooked corn with raw corn, basil instead of cilantro, tomatoes on the vine instead of cherry tomatoes, white onion instead of red, and skipped mixing the dressing - just dump the ingredients mediterranean-style on the salad ingredients and mix vigorously, mashing some of the avocado on the way. I added black beans, mozzarella pieces and jalapenos to my salad, and a touch of minced garlic to the dressing. The sweetness from the corn balanced out the tanginess of the lime. Great summer salad! Someone gave me some avocados, so I looked for a recipe to use them and found this one. WOW, is now my favorite summer salad. The only changes I made was to use lemon, because I didn't have a lime and sauté the onions just a minute to sweeten them. This is an awesome side to any dinner, Mexican or BBQ, ridiculously simple and packs alot of flavor. Out here in the west, cilantro is a staple in alot of our dishes, combined with lime and avocado it's a knockout! I made this several years ago. I hope that the person writting the recipe is very careful about the ingredients list. THere is a large difference between 1/4 cup chopped and 1/4 cup, chopped. This is especially true with nuts and vegetables. Anyway, it looked great and I couldn't wait to try it. Wow; that's when I found out that I, too, have that "yikes, cilantro tastes like soap" gene. I made this for a summer BBQ this past weekend and everyone loved it! I excluded some of the ingredients like the onions as I don't like eating raw onions, but it still turned out perfectly! This salad is the perfect accompaniment to any meal! Delicious, sweet, fresh Jersey corn with creamy, cool avocado and perfectly ripe tomatoes. I made this for an outdoor concert for a group of about 15 and everyone loved it. I waited until we got there to add the avocado to prevent it from turning brown. I did not blend the dressing, but rather just hand mixed with whole cilantro leaves... much better. I also added a 1/4 cup of chopped red onion and rinsed black beans - SO DELICIOUS! Bought corn from farmstand, nice and fresh and I think it is more flavorful than frozen corn. I also think I'll try feta next time to change it up. It is good even without cheese. I actually had everything but the cilantro so I substituted fresh basil and the salad was excellent. I believe it will be just as good with cilanto. This gorgeous salad literally took me no more than 5 minutes to throw together. I had some leftover grilled corn niblets and I added 2 avocados instead of 1. The lime zest/cilantro combination is THE quintessential taste of summer, in my opinion. Not only is this salad fresh, flavourful and light, but it's so easy to make and you can use it as a base for adding/substituting so many things. I made this salad for a 4th of July party and it turned out well. I didn't use the cilantro and it still turned out really good. I like cilantro, but it can be a bit overpowering sometimes, esp. if younger kids will eat the salad. I also poured a little splash of balsamic rice wine vinegar over the salad. I went heavy on the cilantro and lime zest....just like my guacamole. I found the flavors in this dish to be bright and complimentary with a bit more of an emohasis of lime and cilantro because I like those two as dominant flavors in anything. I will crave this dish. This is a great salad to make for a spring summer get-together...although not everyone is a fan of avocados (even though they are super good for you!) However, its a fairly healthy and delicious salad. I've made this three or four times. We grow limes, cilantro, tomatoes, and avocados, so this is a natural. I have found that the salad keeps well overnight (or longer..) if you only take out what you intend to use for that meal and add the avocado to it just before serving. In fact, the longer it sits in the refrigerator, the better the flavors seem to meld. Tasted very good. A few notes: A little acid (vinegar, citrus) may have really spruced up the taste and given bite. Also this is not one to leave in the fridge overnight or toss to roughly, as the avocado does not keep well, and the salad should be served right away.
