Ingredients
- 2 cups cooked corn, fresh or frozen
- 1 avocado, cut into 1/2-inch cubes
- 1 pint cherry tomatoes, halved
- 1/2 cup finely diced red onion
Dressing:
- 2 tablespoons olive oil
- 1/2 teaspoon grated lime zest
- 1 tablespoon fresh lime juice
- 1/4 cup chopped cilantro
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
Directions
Combine the corn, avocado, tomatoes and onion in a large glass bowl. Mix together the dressing ingredients in another bowl, pour over the salad, and gently toss to mix.

This is a family favorite. Everytime I take it somewhere I get multiple requests for the recipe. It tastes so fresh and light. The recipe is perfect with no variations.

We grilled the corn on the cob wrapped in foil and used that. Besdies that we followed the recipe exactly. It is so flavorful and very simple. My husband who thought he didn't like avacados loves this recipe too.

Another Paula Deen recipe that I enjoyed! She rocks at Salad recipes because they're as tasty as ever. I added black beans, mozzarella pieces and jalapenos to my salad, and a touch of minced garlic to the dressing. The sweetness from the corn balanced out the tanginess of the lime. What a treat!
