I added jalapeno to this and served with a Tequila cilentro lime chicken. Fried a corn tortilla flat topped with the salad and then the chicken, fabulous. My hubby loved it! Created a recipe box just so I could save it.

Amazing!! So healthy and went well as a side dish to snapper, grilled chicken, etc. This is the best avocado dish I have made to date!

OMG! Talk about refreshing. Great for a bbq/potluck. I've made this three times this summer. Everyone always wants the recipe. I added a can of black beans, increased the lime juice to 3 Tbsp (love the tangy flavor, added another avocado and added 1tsp of cumin. Tons of flavor for such a simple salad.

Delicious and simple. Made it with grilled corn and yellow and red cherry tomatoes. Made it July 4, 6, and 7: my family loved it, now making it for guests. Wonder if other Paula Dean recipes are this good.

I replaced the cooked corn with raw corn, basil instead of cilantro, tomatoes on the vine instead of cherry tomatoes, white onion instead of red, and skipped mixing the dressing - just dump the ingredients mediterranean-style on the salad ingredients and mix vigorously, mashing some of the avocado on the way. This gives the dressing a creaminess... And I skipped the zest - who has the time? Yum!
