    This simple sounding recipe is the best!!!! these flavors meld so well! I mixed everything together minus the avocado the night before then added the buttery green veggie at the last minute. WOW, everyone scarffed it down.

    Very fresh. Make sure you don't overdo the cilantro, and chop it very fine so it doesn't overpower the dish.

    I've made this a few times now and it's a great side dish that is a welcome change from the usual salad. I did make a mistake the first time I made it and used uncooked corn that I cut fresh off the cob...it was still good! Some said they liked it even better than with cooked corn. I've tried it since with both cooked corn as well as uncooked. Tastes good both ways!

    This is a great recipe for corn salad! I used a combination of frozen corn (dethawed and leftover corn on the cob. . . It was delicious and enjoyed by everyone - even my 6 year old daughter!!

    This makes a GREAT summer meal or a side dish. I will definitely have it onhand at all summer BBQ's... the vegetarians in your life will thank you (along with everyone else!!
