I can't say I was very pleased with this salad. The lime was just overwhelming and didn't really tie the flavors together at all. I could eat it, but my husband didn't like it at all, so that was disappointing.

The dressing didn't tie the flavor of the vegetables together.

Loved this quick dish. I also made the tortilla bowls. That was quick and easy too.

I served this alongside grilled hamburgers for dinner last night and to my surprise, my family ate the whole batch. It was a light, refreshing vegetable "salad" that will definitely come in handy this summer. I think 1 minced jalepeno pepper would give this salad a nice little kick. Although this was fine at room temperature, I bet it would be even better served chilled.

This is a great salad instead of the same ole green salad. I think it would be better as a summer salad but we made it in the winter and liked it just the same.

I tried this in the winter for a Christmas party. It was a hit but I think this is more of a summer salad. Very very good.

This recipe was fast, easy and the results were fabulous. I served it with Quincy Jones' Thriller Ribs and the salad was a big hit! I will definitely serve this again.
