This salad is the perfect accompaniment to any meal! Delicious, sweet, fresh Jersey corn with creamy, cool avocado and perfectly ripe tomatoes. I love the slight tang of lime juice and the freshness of the cilantro... This combination can't be beat. Goes great with any meal, we especially like to make this with a blackened fish. Made this into a meal by adding some boiled shrimp and serving over a salad or w/ a few crackers or tortilla chips. YUM!

I made this for an outdoor concert for a group of about 15 and everyone loved it.
I waited until we got there to add the avocado to prevent it from turning brown. I also grilled the corn in the husk to add some extra flavor and some extra lime juice. Definitely a keeper!

I did not blend the dressing, but rather just hand mixed with whole cilantro leaves... much better. I also added a 1/4 cup of chopped red onion and rinsed black beans - SO DELICIOUS! Bought corn from farmstand, nice and fresh and I think it is more flavorful than frozen corn.

I also think I'll try feta next time to change it up. It is good even without cheese.

I highly recommend this recipe!

I actually had everything but the cilantro so I substituted fresh basil and the salad was excellent. I believe it will be just as good with cilanto. Very fresh tasting and a great way to use summer vegetables. Will definately keep this recipe in my recipe arsenal.. Thank you Paula!!

I made this salad, and I loved it. SUPER easy. Even my kids liked it! The sweet corn, and sweet tomatos made it perfect on a hot summer day. Next time i will add an extra avacado, because I love them, and would like the avacado ratio to be a little higher.

I've made this sevral times and I love is so much -- it also gets great reviews from everyone else. Tonight I added an extra avocado because they are one of my favorite foods. It only made the salad better. Also I was out of cilantro so I used Lemon basil and it was great. Thanks, Paul, for another great recipe.

It was so pretty and perfect to take to a summer picnic - the dressing on it is delicious...I might even make it to put on a salad next time!
