I made this salad for a 4th of July party and it turned out well.
I didn't use the cilantro and it still turned out really good. I like cilantro,
but it can be a bit overpowering sometimes, esp. if younger kids
will eat the salad. I also poured a little splash of balsamic rice
wine vinegar over the salad. Had some the next day too and
    it taste even better.

Great recipe, but I added imitation crab flakes (surimi . Because my herb garden was nearly void of cilantro (yeah, I cook with it faster than it can grow!....I subbed in some fresh basil with the little bit of cilantro I had left. Served it to some friends at an outdoor concert....they loved it!

This salad is definitely a winner - I found the recipe last weekend and have made it twice this week! I have been looking for new salad recipes so I don't have to heat up the kitchen, and this one is tasty and cool for hot summer evenings. It is inexpensive to make and combines ingredients that my husband and I love. I added a light sprinkle of Tony Chachere's and it was perfect!

I went heavy on the cilantro and lime zest....just like my guacamole. I found the flavors in this dish to be bright and complimentary with a bit more of an emohasis of lime and cilantro because I like those two as dominant flavors in anything. I will crave this dish. I was surprised that the raw red onions did not overpower this dish considering that I put about 3/4 of a cup. Simply delicious!!!

I like this recipe but found it a bit bland so I kicked it up with zest and juice of one whole lemon, rice vinegar, more cilantro, and more salt. Also prefer a lighter oil than olive oil. Yum! Great flavor combos.

Easy, fast, simple and FABULOUS. What a way to get friends and family of all ages to eat and love their veges and ask for more. I have made the salad several times by request. Once, I used frozen corn and fresh basil and it was still great. Thank you Paula!!

I wouldn't change a thing about this delicious salad. I used fresh corn and tomatoes. The taste was bright and fresh. The amount of the dressing is spot on perfect. I look forward to making this frequently, especially while fresh, ripe ingredients are available. Thanks, Paula!
