Ingredients

  • 1 (15 1/4-ounce) can whole kernel corn, drained
  • 1 (14 3/4-ounce) can cream-style corn
  • 1 (8-ounce) package corn muffin mix (recommended: Jiffy)
  • 1 cup sour cream
  • 1/2 cup (1 stick) butter, melted
  • 1 to 1 1/2 cups shredded Cheddar

Directions

Preheat oven to 350 degrees F.

In a large bowl, stir together the 2 cans of corn, corn muffin mix, sour cream, and melted butter. Pour into a greased 9 by 13-inch casserole dish. Bake for 45 minutes, or until golden brown. Remove from oven and top with Cheddar. Return to oven for 5 to 10 minutes, or until cheese is melted. Let stand for at least 5 minutes and then serve warm.

    I made this recipe to go with Turkey Chili and they are great together! I used Fat Free Sour Cream and did not bother... topping with cheese (as a minor attempt to lessen the calories of the dish) and it was absolutely scrumptious! It does taste alot like corn cake that are frequently served at mexican restaurants, but that could be why i love it. It's a bit mushy when first served, but it's still great and it's also yummy the next day as leftovers. Will definitely make again!Read more

    Paula honey, This recipe has been in my family for 30 plus years. My mother wrote it out for me about 25 years ago and... she has been dead for 11 years but I still have the stained index card with the recipe on it! Our "version" is EXACTLY the same but I use a large can of cream-style corn instead of the smaller cans of regular and cream corn. Ours is called "Corn Spoonbread".
